2 large sweet potato/ boiled until soft
1 cup grated sweet coconut
1 cup flour
1 teaspoon vanilla
2 tablespoon corn starch
1 cup palm sugar
powder sugar
vegetables oil for fry
confectioner's sugar
peel sweet potato,cut in cube and boil until soft and drain the water and mashed
add grated coconut,vanilla,flour,corn starch,mix until combine.
In the small nonstick fry pan,heat vegetable oil until reach about 350 degree F
fry them until both side golden brown
Sprinkles with powder sugar right away,served warm immediately

Hope you are feeling better and will recover soon. This is something similar to the cekodok, the ones we make from bananas. Using sweet potato is a great change and lovely it looks.

ReplyDeleteI love this dish! I make it couple time and my family loves it SO much. I found that using uncooked sweet potato would ease me in shaping the dough into a ball. Even without sugar powder this dish is great with a cup of hot tea :)
