grilled coconut sticky rice




The glutinous rice can be steam on the stove or rice cooker, If you cook on the stove make sure use a heatproof steamer pan with hole and use cheese cloth to avoid stickiness on the pan to make easy to transfer into mixing bowl or pan. It can be cook on flat grill with little bit coconut oil until brown on both side and serve with Salted roasted coconut flakes / serundeng.



Ingredients:
- 2 cups white glutinous rice soaked for 2 hours
- 1 1/2 / 20 oz coconut milk
- 3 pieces pandan leaves
- 2 pieces bay leaves
- 2 cup fresh grated coconut

Direction:
Bring coconut milk,pandan leaves and bay leaves to boil
Add soaked glutinous rice and stir evenly
Transfer into heatproof steamer pan, put glutinous rice on cheese cloth
Steam on rice cooker or stove for about 30 - 35 minutes( with the lid on if Use stove )
Discard pandan and bay leaves
Transfer into mixing bowl,mashed sticky rice with wooden spoon, not to smooth just to make the rice stick together
Put on plastic wrapper, Roll with rolling pin make it 2-3 inch thick and cut in square
Cook on flat grill with little bit coconut oil until both side looks brown and ready to serve immediately.

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast.
