Rendang meatloaf

This meatloaf inspired by Indonesian beef rendang ground beef seasoned with Rendang spices and topping with spicy coconut sauce, served on mashed potato with a steamed greenbeans or any vegetables you like.
I use coconut milk as a sauce to keep the basic ingredients to this Indonesian signature dish.








Ingredients:


- 2 lbs ground beef

- 2 eggs

- 1 cup panko bread crumb

- 3 stalk onion ( thinly slice )



 grounded spices :

- 2 shallot

- 2 clove garlic

- 1 tablespoon fresh grated ginger

- 1 tablespoon fresh grated galangal

- 2 red chili

- 1/2 teaspoon fresh grated nutmeg

- pinch of ground clove

- 1 1/2 teaspoon of salt



Sauce ingredients :

1 cup thick coconut milk

1teaspoon grated galangal

1 teaspoon grated ginger

1/2  teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon lemon grass powder

1 tablespoon tomato ketchup

1 teaspoon  indonesian hot sauce

1/2 teaspoon palm sugar or sweet soy sauce

( In a sauce pan simmer coconut milk with all the spices 

ingredient for about 10 minutes ) 



Directions (step by step)


Preheat oven on 375 F


in a large bowl mix ground beef with grounded spices

 with hand until combine

add egg  and panko bread crumb and continue to mix

them evenly

divide meat mixture by two or make one big meat loaf.

transfer ground beef mixture onto parchment paper,and

build into meatloaf shape

Bake for 60-70 minutes

  4. Trust me, i've made this spiced meatloaf for my sister's friends.....
    the real rendang is too spicy for them and guess what, i made a meatloaf from about 4 pounds of ground beef and they just lovin it and keep diggin it until finished(with a little rendang sauce spread)

Coconut pandan Muffins

Ingredients : yield 16-18 muffins - 2 stick unsalted butter softened - 1 cup sugar - 4 eggs - 1+1/2 cup self rising flour - 1+ 1/2 cup unsweetened shredded coconut - 1/2 tsp pandan paste  Preparation : Preheat oven on 350 degree F beat butter and sugar until fluffy add egg one at a time add flour,coconut and pandan paste,just beat until all ingredients combine scoop in to muffin's cup,make about 18 -20 muffins ready to bake into the oven about 25 minutes or until insert tootpick come clean Add caption E N J O Y ,,,,

To all my foodie friends, Thank you all so much for your support,comments and shared the foods recipes with me,it's been amazing year to know all of you and your creativity from your kitchen to the blogger world,it's been Fun :) and I know it takes a lot of time to do that,so I appreciated.
