I have lots of squash and basil from the garden, need to use up, So I made squash casserole mixed with onion and basil,topping with mozzarella cheese, it was perfect summer casserole, this recipe is good with zucchini or add some tomato if you like.
If you have leftover egg whites it's work for the recipe too
Ingredients:
- 2 medium size yellow squash
- 1 yellow onion,
- hand full of basil
- 2 Tbsp butter + for greasing
- 2 eggs
- 1/2 cup heavy cream
- 1 cup mozzarella cheese
- 1/2 tsp salt
- 1/2 black pepper
- 1/2 tsp paprika powder
- 1/2 tsp garlic powder
- 1/2 tsp nutmeg
- pinch of red flakes pepper
preheat oven on 350 F
grease casserole baking dish with softened butter or baking spray
cut / large dice yellow squash and onion, put into greased baking dish and top with fresh basil
whisk eggs with cream,season with salt,pepper,paprika, garlic powder and red pepper flakes until combine
pour into squash mixture evenly
cut butter into small cube put on top squash mixture evenly
spread with mozzarella cheese on top
bake into the oven for 35-40 minutes.
I seldom make casserole because I am a typical Asian, I love only Asian food.
