kue lupis/glutinous rice cube with coco pandan syrup

Kue lupis is one of Indonesian dessert made from glutinous rice,Its been long time since I have this dessert last time,,,When I visit New york city about a month ago,I found this glutinous rice cube in "Top line" Asian market in Brooklyn,I bought one package,sixteen little package inside. If I have to make it this glutinous rice cube,It take several hours to make,honestly I never make it my self, I'm glad I found this Instant package,is ready to cook just follow the preparations on the package, the only thing I have to make is syrup/sauce for this dessert. Nangka muffins/Jackfruit muffins

Ripe fruit ( wikipedia ) Ripe jack fruit is naturally sweet with subtle flavouring. It can be used to make a variety of dishes including custards [18]  , cakes,  halo-halo  and more. Ripe jackruit arils are sometimes seeded, fried or  freeze-dried  and sold as jackfruit chips. Ingredients: - 1 1/2 cup flour - 1 1/2 tsp baking powder - 1/2 tsp salt - 1 tsp cinnamon - 1/2 teaspoon all spice - 3/4 cup brown sugar - 2 egg - 1/2 cup coconut oil - 2 Tbsp mayonnaise - 2 Tbsp  jackfruit  juice from can  - 1 can/ 8 oz ripe  Jackfruit  /chop - 1 tsp vanilla extract preparation : preheat oven on 350 degree F shifted dry ingredients ( flour,baking powder,cinnamon ,allspice and salt ) set aside chop ripe jackfruit ,set aside beat sugar,egg and coconut oil until fluffy,add dry ingredients/flour mixture add juice from jackfruit can,and chopped jackfruit and vanilla beat  until co

Sticky rice with mango

My favorite Thai deseert dish, It's the first time I try to make at home, it was perfect dessert to end the meal. Ingredients; 2 cup  sweet rice /  uncooked short- grain white rice 1 cup water 1 1/2 cup light coconut milk 1/2 tsp salt 2 Tbsp light brown sugar 1-2  ripe mango 1 Tbs coconut powder ( for dust or you can make coconut sauce for topping or use thickened coconut milk on top ) Direction : Soak the sweet rice in water for about 2-4 hours. Combine the rice,water,coconut milk,sugar and salt in a sauce pan,bring to a boil,cover and reduce heat to low simmer until water is absorbed about 15 to 20 minutes remove from the heat and set aside,and allow to cool about an hour. and serve with cut sweet ripe mango/sliced,diced or what you prefer ** if Using rice cooker; combine all ingredients and cook in the rice cooker for about 20-25 minutes until stop and let them cool E N J O Y,,,,,,

Baked Brie in pastry

Baked brie in pastry Ingredients: 5 sheet fillo dough 1 tbs melted butter 3 oz brie cheese/ Small block 1/2 cup  sweet jackfruit 2 tbs ginger syrup Preparation : Pre Hear oven 350 degree chop sweet jackfruit brushing each sheet of fillo dough with melted butter cut block brie cheese by two in thin side lay cheese on the center of fillo dough,topping with chopped jackfruit,and sprinkles with ginger syrup fold them each side ,grease pan with melted butter and ready to the oven about 25-30 minutes or until golden brown serve with  tsp ginger syrup and whipping cream if you like !! mango ginger strudel

Mango and ginger are my favorite ingredients I often use in savory or sweet dishes ,This time I combine mango and ginger in pastry as an experiment, sweet with ginger flavored and crunchiness from crust and walnut. Ingredients : - 10 sheets fillo dough - 1 ripe / firm mango - 1 cup finely diced walnut - 1/2 cup butterscotch chips - 3 Tbsp melted butter - 2 Tbsp ginger syrup - 2 Tbs minced/grated ginger - 2 Tbs powder sugar Mango ginger strudel In a mixing bowl, mix dice mango with ginger,ginger syrup,walnut and butterscotch chips on the work surface,layer five sheets fillo dough brushing each sheet with melted butter fill fillo dough with half mango mixture in the middle fold it both side  flip it into grease pan and ready to bake in the oven  for about 25 minutes/until golden brown let them cool,sprinkle with powder sugar as optional

Jackfruit cookies ring

Jackfruit cookies ring ( from wikipedia ) Jackfruit is commonly used in South and Southeast Asian cuisines. [16]  It can be eaten unripe (young) when cooked, or ripe uncooked. [16]  The  seeds  may be boiled or baked like beans. The leaves are used as a wrapping for steamed  idlis . [ edit ] Young fruit The young fruit is called  Polos  in  Sri Lanka . It is a dish with spices to replace meat curries in Sri Lankan cuisine. The skin of unripe (young) jack fruit must be pared first and discarded and then the whole fruit can be chopped into edible portions and cooked to be eaten. The raw young fruit is not edible. [16]  Young jackfruit has a mild flavour and distinctive poultry like texture. The cuisines of  India ,  Nepal ,  Bangladesh , Sri Lanka ,  Indonesia ,  Cambodia , and  Vietnam  use cooked young jackfruit. [16]  In Indonesia, young jackfruit is cooked with coconut milk as  gudeg . In many cultures, jackfruit is boiled and used in curries as a staple food [17]

Pandan coconut cupcakes

Pandan coconut cupcakes  Ingredients : 2 1/2 cup flour 2 tbs baking powder 1 cup unsalted butter ( room temperature ) 1 cup sugar 2 egg 1 tsp pandan paste 1 tsp vanilla extract 1 cup thick coconut milk For the Icing: 1/4 cup condensed milk 1/4 cup powder sugar 1/4 cup sour cream 1/2 tsp vanilla extract Preparation : heat oven on 350 F shift flour and baking powder,set aside Beat butter and sugar until soft and fluffy add egg one at a time  add pandan paste and vanilla add flour mixture then coconut milk pour in to muffin/ cupcakes/ bake cups large size make about 18 cupcakes for the icing : on the Small bowl,just mixer all icing ingredients about 2-3 minutes until combine (  use crunch accent on top of icing or cupcakes decoration ) or toasted of coconut if you like Bake about 20-25 minutes E N J O Y 

Nastar pandan cookies

Nastar cookies is traditional indonesian cookies with sweet pineapple filling, are typically made during holiday,I try made with different sweet filling like a peach preserves,raspberry,and dried cloves flavored, this time I try to make with natural  pandan flavored. with dried cloves just stick on cookies before  you bake them !! without pandan colour with dried cloves Ingredients : 1 3/4 cups all-purpose flour 1/2  tsp salt 1 cup softened unsalted butter 1/4 cup confectionesrs' sugar 3 egg yolk 1/2 tsp vanilla extract 3 drop pandan paste  1 cup pineapple jam/preserve 1 egg wash dried cloves ( optional ) Directions  - Sift flour and salt into a bowl and set aside.   - Using a stand mixer, cream butter and confectioners’ sugar on medium speed for several minutes until light and fluffy. Banana Rolls

Baked banana roll Ingredients: 2 ripe banana 1 9" pie crusts  2 tbs cream cheese 3 tbs  decorating chocolate 1 tbs melted butter ( this recipe is for 4 banana roll ) for Icing : 1 tbs powder sugar 1 tbs condensed milk 1 tbs caramel sauce Preparation; pre heat oven to 450 F cut banana by two roll it in to  chocolate decoration  set aside roll a pie crusts by square or jut leave the way it is and cut by two,like a in the picture bellow. then,,,,on the pie crusts spread about  1 tsp cream cheese  ( room temperature )  put a cut banana in the top of cream cheese and roll it and fold it on both side,to cover a banana from melted chocolate and cream cheese, then brush with melted butter all around it, put on the bake pan with parchment paper and bake about 10-14 minutes until the crust is golden brown. sprinkles with caramel icing when is still warm,and ready to serve,hot,warm or cold serve with ice cream if you like. Baked strawberry tartlets

I love fresh strawberry in any season, but if I have leftover strawberry it doesn't look fresh anymore, I normally blend with any fruits to make juice or blend with yogurt. This time I had an idea to make a small dessert, strawberry wrapped with pie crust brush with melted butter and baked until crusty or golden brown drizzle with melted chocolate because can't go wrong. Ingredients; - 1 sheet  store bought pie crust - 14 fresh strawberries - 2 Tbsp melted butter Preparation Cut pie crust  round with  cookie / biscuit cutter medium size or depend how large of strawberry One sheet pie crust equal 14 round, brush with melted butter *See a picture above* Then wrap around a strawberry with cut round pie crust *see picture above Then brush wrap pie crust with melted butter one more time Put on the baking pan with parchment paper Bake on 400 F  oven for 12-15 minutes  or until pie crust  golden brown  Melted chocolate - 1 bar 4 oz  semi-sweet cho

Mango pudding

Mango is one of my favorite fruits since I was kid,back home in Indonesia we had varieties of mangoes,Good mango is when we cut and peeled there is no string in it,that what I like, I don't like stringy mango  because is too hard to slice it and if  too ripe is not good either,the good one is  ripe but still firm, anyway it's my personal opinion about mango :) Ingredients - 2 ripe mango - 3 tsp Kosher unflavored gelatin / small package - 1/2 cup water - 1/2 cup condensed milk - 2 tbs sugar - 3/4 cup coconut milk that 's a good one meaty without string :) Preparation : peeled mango and cut/sliced puree mango in food processor or blender and set aside on the sauce pan boil 1/2 cup water until hot (or microwave about a minute ) pour unflavored gelatin to the hot water stirring really well,make sure there is no lump add condensed milk and sugar stir really well until combine and mixing with mango puree  add coconut milk and stir reall

Es campur/mixed ice fruits

Es campur / ice mixed with fruits in coconut water with simple syrup or use condensed milk for sweetness,  The main ingredients are coconut string or coconut gel ( nata the coco ) it is available in Asian grocery store, can be mix with any fruits you like such mango,strawberry,ripe jack fruit avocado etc. Ingredients : estimates - Coconut water/juice - 1 mango/ cut in cube - strawberries / slices - Coconut gel or coconut string - Condensed milk - ice cube For simple syrup ( mix 4 Tbsp sugar with 1/2 cup water and pandan leaf or substitute with 1/2 teaspoon vanilla extract simmer in few minutes until sugar are dissolved ) How to prepare: Basically  you can serve in individual bowl or cup All ingredients can be estimates use as much fruits as you like and adjust sweetness if use both simple syrup and condensed milk or use one of them.
