Vegetarian tofu curry

Curry powder is one of favorite spice ingredients in my cooking, I use it so often for any curry dishes, meat,seafood or vegetarians and also to spice up and blend in humus.
This time I made vegetarian yellow curry with tofu mixed with vegetables.

Use any vegetables you like such potatoes, broccoli,cauliflower,snow peas,green beans etc.
To make it more easier you can buy fried tofu  is available in most Asian market, that way you don't have to cook the tofu,it's a lot faster to prepare I use them so often.

Vegetarian tofu curry
Ingredients :

- 1  package fried tofu or 1 block extra firm uncooked tofu 12 oz
- 2 large potatoes
- 1/2 cauliflower or broccoli
- 2 cup snow peas
- 2 Tbsp vegetable oil and extra if use uncooked tofu

for the curry sauce :

- 3 clove shallot ( chopped )
- 2 clove garlic ( chopped )
- 1 1/2 cups coconut milk
- 2 stalk lemon grass /thinly slices
- 1 Tbs curry powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cumin
- 1/2 teaspoon cayenne pepper
- 2 cube vegetable bouillon or 1 teaspoon salt or taste
- 1 teaspoon white/black pepper
- 1 teaspoon palm sugar

Preparation :
In large skillet heat vegetable oil for fry
If use uncooked tofu, fry tofu until golden brown
cut vegetables into bite size,set aside

chop garlic and shallot
on the skillet heat about 2 Tbsp vegetable oil
fry shallot and garlic until fragrant
add coconut milk,lemon grass and vegetable bouillon until dissolved  add the rest of spices ingredients ( curry,turmeric,cumin,cayenne pepper,white pepper and palm sugar )
add fried tofu and potatoes
turn down the heat ,stir and simmer for about 10 minutes or until potato is cooked
add  cauliflowe and snow peas
simmer for another 3 minutes
and ready to serve with rice

  2. I've never cooked with tofu. It does look good.

  3. This looks really tasty! I've not made tofu with curry...but I heard it absorbs the flavors of the ingredients. If it tastes anything like it looks, it's bound to be amazing!

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. Chocolate fudge raspberry cake

I decide to make my own birthday cake to share with my friends, after I search the cakes recipe in cook books and looks around ingredients in the pantry and the fridge, I found this chocolate fudge cake recipe. The recipe adapted from "frame by frame"  cook book with slighly change add raspberry curd on chocolate frosting and decorated with vanilla buttercream frosting  with fresh raspberry to add colours into the cake.
