Molten chocolate truffles cupcakes

I dedicated this blog post to our friend who gave us chocolates during the holiday, In my previous post I use Lind chili dark chocolate in spicy wild rice mushrooms soup, Another friend gift me this Assorted chocolate truffles  I had a lot of chocolates, I use up some of them to fill in the centered of this warm molten cupcakes.
Is like a surprise each cupcake filled with different taste of melted chocolate truffles.








Peanut butter,dark,milk,white and extra dark chocolate truffles.






Ingredients :
- 2 stick unsalted butter/ room temperature
- 1 cup sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 4 Tablespoon unsweetened cocoa powder
- 4 Tablespoon milk
- 12 pieces  Assorted chocolate truffles

Preparations:
* Preheat the oven on 375 F, put 12 paper baking cases in a muffin pan
* shift dry ingredients together ( flour,baking soda,salt and cocoa powder ) set aside
* In the mixer beat room temperature butter  and sugar until fluffy,add egg one at a time and add vanilla
* add dry ingredients about a cup at a time, add milk and beat until combine
* spoon half of the batter into the paper cases,make an indentation in the center, place chocolate truffles in each indentation, then spoon remaining  cake batter on top,make sure the chocolate truffles are covered with cake batter
* Bake the cupcakes in the preheated oven for 20 minutes or until well risen and springy to the touch,leave the cupcakes 2-3 minutes before serving,dust with shift confectioner's sugar.

*Tip* If you have leftover, heat up a cupcake in microwave for 20 second before you serve!

  3. Wow... these are so fun and clever. I have done cupcakes with peanut butter cups... but I like how these chocolate truffles get all melted inside. Well done!!!

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast.
