spicy garlic chili sauce

Sambal is a condiments that has a chili base sauce is very popular in South East Asian country, Sambal can be use to add more spiciness to any dishes, I normally use this chili sauce for stir fry, such a spicy fried rice,fried noodles, noodles soup, vegetables and also seafood and meat dishes.


Traditionally my mother made ​​ sambal / chili sauce in a pestle and mortar, by mixing the ingredients in the grind, but I made it in a different way, all the sauce ingredients roasted in the oven and grind in food processor.


I use fresh cayenne pepper and tomato from the garden and blend with garlic,shallots,lemon juice, salt,kafir lime leaf powder and drizzle with vegetable oil.




Ingredients :
- 7 clove garlic
- 7 clove shallots/ 1 red onion
- 10 fresh cayenne pepper
- 3 tomato/ cut in quarter
- 1/2 lemon juice
- 1 teaspoon salt
- 1 teaspoon kafir lime leaf powder
- 1/4 cup vegetable oil

Direction :
preheat oven on 350 F
mix all ingredients into baking dish, drizzle with vegetable oil
bake in the oven 45-50 minutes,let them cool
transfer into food processor, and pulse until smooth and combine,about a minute or so.
put in a jar and store in the fridge.

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast.
