Coconut sandwich cookies



When I made this coconut cookies the first time, I spread the cookie dough on cookie sheet, and cut it with round shape cookie cutter after baked, the shape don't looks good  ( see picture below),
Then  I try to make it again, This time I scoop the cookie batter with a small size scoop,it's look better
 ( see picture above )
With grated coconut,looks smoother
Ingredients :
-  1 1/2 all purpose flour
-  1/2 tsp baking powder
-  1/2 tsp baking soda
-  pinch of salt
- 1 stick unsalted butter at room tempearture
- 1 egg yolk
- 3/4 cup light corn syrup
- 1 tsp vanilla extract
- 1 bag 7 oz tender flake coconut flakes
-  3/4 cup creme coconut curd

Direction:
Preheat oven on 350 F, line cookie sheet with parchment paper.
Shift flour,baking powder,baking soda and salt,set aside
beat butter,egg yolk and corn syrup until combine add flour mixture,coconut flakes and vanilla beat another a minute until well mixed.
scoop cookie dough with a small size scoop, line in cookie sheet about one inch apart  bake for about 20-25 minutes.
let them cool and spread the creme coconut curd on one cookie and top with another cookie.

  5. nice tropical cookies, 'unfortunately the ingredients especilly the dried coconuf flakes that usually used for making coookies is not that easy to find in Indonesia, hehe
    i'm feeling lucky finding this recipe with literrary fresh(or frozen) coconut...

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast.
