Tofu vegetarian-vegan chili

Tofu is one of a 'must" ingredient on my grocery list,I use tofu so often in my cooking,I cook in stir fry with vegetables,curry,soup,salad or even simple fried tofu with sweet and sour sauce.
I always wanted to make tofu chili, so I made it this week :)




Ingredients :
- 1 block firm tofu
- 1 can 15 oz cannelini bean
- 1 can 15 oz black bean
- 2 large carrot
- 1 tbsp olive oil
- 1  yellow onion
- 2 clove garlic
- 1 jalapeno pepper
- 1 can 15 oz dice tomatoes
- 2 bay leaves
- 1 tbsp salt
- 1 tsp black pepper
- 1/2 tbsp cumin powder
- 1 tsp cardamom powder
- 1/2 tbsp chili powder
- 1/2  tsp sugar
- 1/2 cup ketchup
- 1 cup water or estimates
- 2 stalk thinly slice green onion for topping ( optional )
- greated cheddar cheese topping for non vegan ( optional )

Preparation :
dice carrot and onion,set aside
chop garlic and jalapeno set aside
crumble tofu with hand,set aside
drain cannelini and black beans
heat olive oil on medium high temperature use medium to  large soup pan
saute carrot,onion,garlic and jalapeno until cook/soft
add cannelinni beans,and black beans,dice tomato and crumbled tofu
and season with the rest of spices ingredients,add ketcup and  1/2 water /estimates
cook for about 15 minutes and let them simmer for another 15 minutes or so ,stir frequently until the soup look thicker

Serve with any side dish you like,I like mine with potato chip's :)

  2. another delicious example of the versatility of tofu! This is the first I have seen in chili, but it looks like a winner of an idea. I am sure you will be making this dish again-yum!

  7. Very flavour, what more I too use tofu so often in my cooking plus the combo of spices and yes to more chillies. Looks so splendid and thumbs up for another Asian recipe.

Coconut pandan Muffins

Ingredients : yield 16-18 muffins - 2 stick unsalted butter softened - 1 cup sugar - 4 eggs - 1+1/2 cup self rising flour - 1+ 1/2 cup unsweetened shredded coconut - 1/2 tsp pandan paste  Preparation : Preheat oven on 350 degree F beat butter and sugar until fluffy add egg one at a time add flour,coconut and pandan paste,just beat until all ingredients combine scoop in to muffin's cup,make about 18 -20 muffins ready to bake into the oven about 25 minutes or until insert tootpick come clean Add caption E N J O Y ,,,,
