Dau Hu Cuon/Tofu springrolls with peanut sauce


You can prepare this tofu spring rolls with store bought fried tofu to make it more easier or grilled extra firm tofu and also you can use season fried bean curd ( normally use for Inarizushi ) just slice them and ready to use for any cold spring rolls.





I made this cold tofu spring rolls so often, I brings to potluck or party, one of all my friends  favorite  especially my homemade peanut sauce to serve with this cold spring rolls.


Ingredients :
- 1 package Rice paper wrapper
- 1 block fried tofu/ bean curd
- 4 oz vermicelli/rice noodles ( optional )
- bunch of lettuce
- half of English cucumber/cut in strip
- 1 carrot/cut in strip
- bunch of fresh Thai basil
- bunch of cilantro


Dip rice paper  wrapper in to cold water about 3-5 second
put in to work surface/cutting board
arrange cut cucumber,carrot,vermicelli,lettuce, basil, some cilantro and few sliced bean curd skin/tofu in the side  of rice paper  wrapper sheet
roll one time and fold them both side and continue to roll  very tight.



Slice them if you like and ready to dip in to peanut sauce


Peanut sauce Ingredients :
1/2 cup ground unsalted peanut
2 tbs sweet soy sauce

1 tbs sesame oil
1 tbs soy sauce
1 tsp fish sauce
1 tbs hot sauce/sriracha/what u prefer ( optional )
1 tbs lime juice
1 tbs grated ginger
1/2 tsp garlic powder
( just whisk it together until combine )

  2. I have never made this before, simply I am afraid of rolling the stuffing into the rolls but you sure have done a great one. This is so healthy and I can like just have a few for my dinner.

    Btw, I will be heading to Vietnam in Feb and hopefully I can take some there.

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. Ingredients : - 2 cans / 2lb  cooked young jack fruit - 1 lb green beans - 1 package block fried tofu / cut in cube - 3 shallots - 2 cloves garlic - 2 fresh cayenne pepper - 1 teaspoon coriander - 2 bay leaves - 2 inch galanggal crushed - 1 stalk lemon grass,crushed - 1 can coconut milk add with 3 cups water - 2 cubes vegetable bouillon  - 1 teas

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast.
