Yellow zucchini and shrimp fritters

Summer season is gone,from now on is getting cold and colder in the morning.
I start blogging about cooking/recipes this summer  about four months ago so is not too long,it's been fun and  motivated me to read and share with other food blogger,I had  few experiment on baking and learn more and more,,,,










The plants is almost  over in my little garden in the back yard,still have little bit of tomatoes and  a lot of Thai chilli's ( I have to freeze  these chili's )
and thanks to my friend cindy and bridget to share what they have in the their garden one of them is yellow zucchini,,,
the last zucchini I had from them about a month ago,I can believe is still good and firm,of course I don't want to throw away,,,so I made zucchini fritters  mixed with shrimp :)

Yellow zucchini and shrimp fritters
Ingredients :
1 yellow zucchini
1 egg
1/2 cup chopped cooked shrimp
5 tbs flour
handful of  chopped green onion
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
pinch of curry powder
1/4 cup vegetable oil for fry

Preparation:
shred yellow zucchini,chop green onion and shrimp, set aside
on the mixing bowl,mix all ingredients until combine
Heat oil on the skillet on medium high
drop about 2 tbs zucchini fritter batter in to hot oil
fry until golden brown,about 2-3 minutes each side

sour cream herb sauce
ingredients :
1/4 cup sour cream
with little bit of chopped herbs ( green onion,cilantro and basil )
just mix it until combine

  3. Isn't it awesome growing our own veges and herbs at home, I too have a small plot with curry leaves, pandan leaves, basil, lemon balm etc etc.

    I like that crispy fritters with zucchini, after all, its a veg always in my fridge.

  5. What a great idea for a fritter!! I wish I could grow some of my own herbs, but the balcony in our apartment doesn't get much sun and there's always kids playing around!

    I always loves having zucchini for a snack... hehe he
    Today I go to market and haven't find any... sad :(

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. Ingredients : - 2 cans / 2lb  cooked young jack fruit - 1 lb green beans - 1 package block fried tofu / cut in cube - 3 shallots - 2 cloves garlic - 2 fresh cayenne pepper - 1 teaspoon coriander - 2 bay leaves - 2 inch galanggal crushed - 1 stalk lemon grass,crushed - 1 can coconut milk add with 3 cups water - 2 cubes vegetable bouillon  - 1 teas

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. Ingredients : - 3 medium size sweet potato - 6 large tomato - 1 yellow onion - 4 clove garlic - 11/2 Tbsp dry basil -  2 hot chili or pinch red pepper flakes / optional - 1 teaspoon black pepper - 1 teaspoon salt/taste - 4 Tbsp olive oil - 1 teaspoon honey - 1/2 cup sour cream / 1/2 cup coconut milk Directions: Preheat the oven on 400 F Peel sweet potato and cut in large cube, Cut tomato in wedges slice onion and crush garlic, transfer all cut ingredients,garlic and chili into baking dish, sprinkle with olive oil  and dry seasoning ( dry basil,red
