Nangka muffins/Jackfruit muffins

Ripe jack fruit is naturally sweet with subtle flavouring. It can be used to make a variety of dishes including custards[18] , cakes, halo-halo and more. Ripe jackruit arils are sometimes seeded, fried or freeze-dried and sold as jackfruit chips.



Ingredients:
- 1 1/2 cup flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 teaspoon all spice
- 3/4 cup brown sugar
- 2 egg
- 1/2 cup coconut oil
- 2 Tbsp mayonnaise
- 2 Tbsp jackfruit juice from can 
- 1 can/ 8 oz ripe Jackfruit /chop
- 1 tsp vanilla extract




preparation :
preheat oven on 350 degree F
shifted dry ingredients ( flour,baking powder,cinnamon ,allspice and salt ) set aside
chop ripe jackfruit,set aside
beat sugar,egg and coconut oil until fluffy,add dry ingredients/flour mixture
add juice from jackfruit can,and chopped jackfruit and vanilla beat  until combine.
ready to large bake  muffins cups,
into oven, bake 20-24 minutes
yield 12 muffins

    If you like sweet fruit,,you will like this jackfruit,smell so fragrance for dessert,I never find the fresh one here.

  6. Nice outcome you did with the jackfruit, one of the fav in Asian countries. We even cook the raw version, I am sure you are aware of this, made into masak lemak with prawns or salt fish.

    They called "Gudeg" in Indonesia for a raw version,but with prawn and salt fish sound very interesting.

    yup,i have two cooking project this week,for 15 and 35 peoples,I'm learning how to do a catering bussines,just for a family and friends,so,,,is gonna be fun :)

  15. Simply delicious, i just made it with fresh processed red rice flour instead of all purpose flour since im dad sufferring from Diabetes Melitus...6
    It's preety damn good!
