Green papaya pineapple cupcakes


green papaya pineapple cupcakes
Ingredients:

1 1/2 cup shredded green papaya
1/2 cup chopped fresh pineapple
2 cup flour
2 tbs baking powder
2 tbs baking soda
2 tbs cinnamon
1 tsp clove powder
1/2 tsp salt
1 tsp vanilla
1 1/2 cup sugar + 3 tbs 
1 1/4 cup vegetbale oil
4 egg

  • Preparation:
shredded green papaya and chopp pineapple really fine,and marinate with 3 tbs sugar for an hour or so,,,
pre heat oven on 325 degree F
Sift flour, baking powder, baking soda, cinnamon,clove powder and salt. Set aside.
In a mixer bowl, whisk together sugar and oil until well blended. Add eggs one at a time,add vanilla, mix well.add green papaya and pineapple mixture
Add in flour mixture. Beat until well combined 

on the cupcake/muffin molds,line large baking cup
and spoon cupcakes batter into mold/cups,fill only about 1/2-3/4,not too full
so when the batter rise you don't have to worry about overflow ( just my experience things )
yield : about 20 + cupcakes

for the icing :
  • 1 stick butter room temperature
  • 1 1/2 cup powder sugar
  • 4 tbs pineapple jam/preserve
on the mixing bowl,mixer all icing ingredients about 2-3 minutes

  1. I have never ever seen a cupcake with green papaya in it and I am happy it works for you. But I think I prefer the green papaya salad instead. Green papayas are really expensive here and if I ever get one I want to make your salad!
