Chicken curry is normally thick curry sauce,but this time i made curry chicken soup.

Yellow curry chicken soup
Ingredients :
1 boneless chicken breast /8 oz
3 tbs vegetable oil/olive oil
1 can baby corn/15 oz
2 cup cut fresh green bean
3/4 cup coconut milk
2 cup water
1 clove garlic
1 shallot
1/2 stalk lemongrass
1/2 tsp turmeric
1 tsp curry powder
1 tsp salt/estimate
1/2 tsp black pepper
pinch of red flake pepper/cayenne
1/2 tsp brown sugar

Preparation;
slice chicken breast/thin
chop shallot,garlic,and lemon grass
on medium high Heat oil on deep skillet or soup pan
saute sliced chicken until soft lightly brown
add chopped shallot,garlic and lemongrass
cook until soft and smell out of it ( about few minute )
add coconut milk and water,simmer until boiling to cook more chicken
add vegetables ( baby corn and green bean )
add the rest of spices,,simmer until vegetable soft not too done
serving about 4-6 
serve with whit rice

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast.
