To all my foodie friends, Thank you all so much for your support,comments and shared the foods recipes with me,it's been amazing year to know all of you and your creativity from your kitchen to the blogger world,it's been Fun :) and I know it takes a lot of time to do that,so I appreciated. Carrot orange & ginger cupacakes with mascarpone frosting

It's beautiful monday morning here with sunshine but little bit cold, I can feel the fall season is coming soon :) Last week, I made this carrot orange & ginger cupcakes with mascarpone cheese frosting and sprinkle with orange cream crunch just to add color on the frosting :) Ingredients : 12 cupcakes - 8 tbsp butter,softened - 1/2 cup brown sugar - 1 small orange/grated and juice - 2 large eggs lightly beaten - 6 oz / 175 gr carrot grated - 1/4 cup walnut copped - 1 cup all purpose flour - 1 tsp ground pumpkin pie spice - 2 tbsp fresh ginger /grated - 1 1/2 tsp baking powder Frosting : 1 1/4 cups mascarpone cheese 4 tbsp confectioners' sugar grated rind of 1 large orange sprinkle with orange cream crunch ( optional ) Preparation : preheat the oven to 350 F,put 12 muffin paper cases in a muffin pan put butter,sugar orange rind and grated ginger in the bowl and beat together until light and fluffy, gradually add the eggs beating well after eac

Feta Tomato Omelet wrap

Unlike regular omelet I mix all ingredients together,cook and flip,roll in flour tortilla. the saltiness from feta crumbled cheese is perfect together with fresh diced tomato,no salt needed. Ingredients : - 2 eggs - 1/4 cup diced tomato - 2 Tbsp feta cheese crumbled. - 1 tsp butter Preparation : Whisk the eggs and mix them with diced tomato and feta crumbled cheese, Heat non-stick skillet with 1 teaspoon of butter cook in 2 minutes each side or until done. heat flout tortilla on the same skillet about 20 second each side and fill with feta omelet and wrap it ready to serve for breakfast.

Pears ginger Crisp

To my friend Cindy Thank you so much for sharing those Pears with us and I have to do something with it,it is a lot of pears , you gave me fresh pears from the  back yard,and now you have Pears ginger crisp for a dessert :) Ingredients : - 8-10 pears - 2 Tbsp fresh grated ginger - 1/2 tsp grated nutmeg - 1/2 tsp ground cinnamon - 1 lemon  juice and zest or Orange - 2 Tbsp ginger syrup for crisp/crumble - 1 cup oatmeal/old fashioned oats - 1 cup granolla cereal - 2 Tbsp flour - 4 Tbsp butter - 2 Tbsp brown sugar ( Into food processor,process until crumbled ) Preparation: Preheat oven on 350 F bake for about 40-50 minutes peel pears,cored and cut in cube  into baking dish mix pears cube with grated ginger,lemon juice and zest or orange ,nutmeg,cinnamon and ginger syrup mix them until combine  topping with crumble mixture Serve warm,topping with frozen whipped cream/ ice cream if you like. Shrimp Corn fritters

Happy Tuesday everyone, It's been awhile since my last post, I was little bit busy this week,I hope everyone still enjoy the summer weather for the rest of season. Fresh sweet corn is cheaper in the summer time,I like to use them as ingredients of my cooking. I made shrimp corn fritters,simple and easy ! Serve as side dish with  rice or curry dishes :) Ingredients : - 2 fresh sweet corn,cut on the cob - 1/2 lb salad shrimp,chopped/ medium size shrimp - 2 Tbsp flour - 1 egg - 1/4 cup  shredded mozzarella cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder vegetable oil for fry about 1/4 cup Preparation : In a bowl mix all ingredients until combine,stir the batter evenly Heat vegetable oil in medium high temperature spoon the batter into hot oil,fry about 2-3 minutes each side until golden brown. transfer to the plate lay with paper towel.

Asian salmon en papillote

The aromatic smell that out of these fish parcel as you open them is deliciously tempting,instead of salmon fillet you could use thick fillet or halibut. Ingredients: - 1 carrot - 1 zucchini - 6 scallion/green onion - 2 tbsp pickled ginger strip - 1 lime - 2 garlic clove/grated - 2 tbsp teriyaki sauce or fish sauce - 2 tsp sesame oil - 4 salmon fillet 6 or 7 ounce each -  salt + ground black pepper Preparation : cut zucchini,carrot,scallions into matchstick, mix them with pickled ginger strip,set aside place the teriyaki sauce or fish sauce into a bowl stir in lime juice,garlic and sesame oil preheat the oven on 400 F cut four of parchment paper,each with diameter of 16 inches season the salmon with salt and pepper lay a pile of vegetables mixture on the center lay fillet on top and topping with more vegetable mixture on top spoon a quarter of teriyaki sauce mixture or fish sauce mixture over the top fold the side of parchment pape
