Shrimp Corn fritters

Happy Tuesday everyone, It's been awhile since my last post, I was little bit busy this week,I hope everyone still enjoy the summer weather for the rest of season. Fresh sweet corn is cheaper in the summer time,I like to use them as ingredients of my cooking. I made shrimp corn fritters,simple and easy ! Serve as side dish with  rice or curry dishes :) Ingredients : - 2 fresh sweet corn,cut on the cob - 1/2 lb salad shrimp,chopped/ medium size shrimp - 2 Tbsp flour - 1 egg - 1/4 cup  shredded mozzarella cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder vegetable oil for fry about 1/4 cup Preparation : In a bowl mix all ingredients until combine,stir the batter evenly Heat vegetable oil in medium high temperature spoon the batter into hot oil,fry about 2-3 minutes each side until golden brown. transfer to the plate lay with paper towel.

Asian salmon en papillote

The aromatic smell that out of these fish parcel as you open them is deliciously tempting,instead of salmon fillet you could use thick fillet or halibut. Ingredients: - 1 carrot - 1 zucchini - 6 scallion/green onion - 2 tbsp pickled ginger strip - 1 lime - 2 garlic clove/grated - 2 tbsp teriyaki sauce or fish sauce - 2 tsp sesame oil - 4 salmon fillet 6 or 7 ounce each -  salt + ground black pepper Preparation : cut zucchini,carrot,scallions into matchstick, mix them with pickled ginger strip,set aside place the teriyaki sauce or fish sauce into a bowl stir in lime juice,garlic and sesame oil preheat the oven on 400 F cut four of parchment paper,each with diameter of 16 inches season the salmon with salt and pepper lay a pile of vegetables mixture on the center lay fillet on top and topping with more vegetable mixture on top spoon a quarter of teriyaki sauce mixture or fish sauce mixture over the top fold the side of parchment ...

Squash and basil casserole

I have lots of squash and basil from the garden, need to use up, So I made squash casserole mixed with onion and basil,topping with mozzarella cheese, it was perfect summer casserole, this recipe is good with zucchini or add some tomato if you like. Dairy Free Mung bean Ice Cream

Green mung beans   are commonly use for sweet dishes in Indonesia, one of popular Indonesian dish  are mung bean porridge  or we call it "bubur kacang hijau" this sweet porridge can be serve as warm breakfast or dessert,  I was inspired to make ice cream recipe out of it, So I made dairy free mung bean ice cream, but you can use dairy ingredients if you like to try out. Mung bean seeds is very hard, soak them first in cold water for few hours before you cook, or if you soak over night make sure store in the fridge ,other wise if you leave them on room temperature they will  be sprout. Water spinach stir fry

Kang kung = water spinach  This vegetable is common ingredient in South East Asian country like Indonesia, Singapore and Malaysia, it is very easy to find and cheaper than any other vegetables. But of course  is not the same here in the US anything cheaper in the country origin it's mean more expensive here. By the way It's my first time to see this Kang kung / water spinach at local Asian market. I can't even remember when I had this water spinach/kangkung last time. Mango and coconut strings in juice.

Since I'm fasting during the days for Ramadan,I like to have refreshing drinks when I brake my fast,so this kind of drinks is very simple to make and also perfect drinks for hot summer days like these days !! you can use any fruits you like,,, Ingredients : - 1 mango ( peel,pitted and cut in cube ) - 1 cup string coconut in syrup - 3 cup mango juice - 1 cup sparkling water ( perrier ) Just mix all ingredients on the jar or bowl and serve with ice cube !!
