Artichoke and asparagus pasta salad |
Ingredients:
I package barilla tricolor rotini
2 cups grilled artichokes in oil (Del destino)
2 cup cut fresh asparagus
dressing ingredients:
2 clove garlic
1 lemon ( zest and juice )
1/4 cup sun dried tomato
2 tbs olive oil
2 tbs oil from grilled artichoke
1 tsp honey
1 tsp black pepper
Preparation:
on the food processor or chopper mix all dressing ingredients together until combine, set aside
cut artichokes in to bite pieces set aside
trim and cut fresh asparagus and wash,
bring water to boil,and cook pasta follow the direction on the package
drop cut asparagus let cook together with pasta until pasta is done ( about 2-3 minutes remaining time )
drain pasta and asparagus,
on the mixing bowl,mix pasta,asparagus and artichokes, pour with dressing and stir until combine
ready to serve,warm or cold.

ReplyDeleteNice combination.. Delicious looking pasta salad. Looks so colorful with the rotinis. I have a artichoke recipe on my blog if you are interested. I use the canned one, but try to soak it in water for longer period to take out that vinegar taste.
