Asparagus Salad and Grilled Prawns with avocado poppy seed vinaigrette

The avocado salad dressing/vinaigrette on this salad is an experiment,but I definitely will make it again,I topping with grilled prawn on the salad as our dinner meals,It was Yummy,if you like avocado I recommended this avocado vinaigrette :) Ingredients : - Asparagus - sweet pepper - English cucumber - cherry tomato - 10  fresh large  prawns ( wash and trim asparagus,boil for few minutes until soft,and transfer to ice cold water to keep a fresh color and set aside,slice cucumber and sweet pepper and cut half cherry tomato,mix them all together in the salad bowl ) grilled prawns : - peel the skin - sprinkle with peppercorn chili oil,salt,pepper and paprika powder - grilled about 3 minutes each side or until color change to pink Avocado vinaigrette : - 1 ripe has avocado - 1 tbsp avocado oil - 1 lemon/zest+ juice - 1/2 tbsp honey - 3 tbsp citrus vitamin water - 1 tsp poppy seeds - pinch of salt ( smash avocado with fork until smooth add the rest of

Salmon Tempura salad with peanut sauce

In my previous post  about a week ago I made peanut sauce for lettuce bowl salad for dinner with friends, and I still have leftover need to use up,so I use them for "salmon tempura salad " as a *tip* you can serve as appetizer menu,,,  Or serve as a dinner meal,,,,add fried tofu or tempeh is best :) Peanut sauce recipe are  Here for the salad you will need : - lettuce - English cucumber/ cut in strip - shredded carrot - thinly slice red onion Salmon tempura : - 1  fresh salmon fillet about 6 oz - canola/vegetable oil for fry - 1 cup tempura batter mix - 3/4 cup ice cold water preparation : Heat vegetable oil in medium high temperature about 350 Degree F cut  fresh salmon fillet into thin strips mix tempura batter mix with ice cold water and stir in mix quickly drop salmon strip into tempura batter mix,fry about 2 minutes each side or until golden brown and crispy drain tempura on paper towel ready to serve as topping into a salad mix

Lettuce bowl salad with peanut dressing

This is one of the menu from our dinner with friends this weekend,is very simple salad with peanut dressing/ Indonesian gado-gado salad dressing. I use butter head lettuce for a bowl of salad,just plate them together with main course meal. You will need : - butter head lettuce - English cucumber/thinly slice - carrot/ shredded - red onion/thinly slice - wonton chips for topping if you like/optional  peanut sauce Ingredients : - 1 1/2 cup roasted peanut - 1 cup coconut milk - 4 garlic - 2 Thai chili - 3 kafir lime leaves - 1/2 cup grated palm sugar - 1/2 tbsp vegetable oil -  salt to taste -  1/4 cup water Preparation : grind garlic and chili,fry with 1 tbs vegetable oil until fragrant,set aside grind  roasted crushed peanut, and combine with coconut milk,whisk them well transfer to a blender and process to a smooth sauce Pour into sauce pan,add very thinly sliced kafir lime leaves,fry garlic and chili,grated palm sugar,salt and water, bring to simmer

Chickpeas/garbanzo beans and avocado salad

If you guys like chickpea/garbanzo beans and avocado,you should try this salad recipe either you serve as salad or you can roll in flour tortilla as sandwich. as my experiment I fry garlic and shallot in olive oil instead use a fresh one,and I really like the way turn out,,, by the way this is the second time I make this salad and I will make it again soon :) Ingredients - 1 can chickpea/garbanzo bean 15,5 oz - 1 can canellini beans 15 oz - 3 sweet peppers/ rough chop - 1 cup cherry tomato/ cut in half - 1/4 cup chopped red onion - handful chopped cilantro - 5 sun dried tomato in oil/chop/ I use California sun dried tomato - avocado cut in cube ( mix until last step ) for the dressing : - 2 tbsp olive oil - 1 tbsp oil from sun dried tomato - 2 -3 clove garlic/thinly slice/chop - 1 shallot/ thinly slice/chop - 1/2 tsp salt - 1/2 tbsp honey - 1 tsp lime zest - 1 tbsp lime juice Preparation : in large bowl mix chickpea,canellini bean,sweet pepper,cherry tomat

Pineapple Mango Chicken salad

Ingredients: 1 cup chunk fresh pineapple 1 cup chunk fresh mango 1 can chunk chicken breast/12,5 oz 2 tbs pomegranate seed  2 stalk scallion/green onion thinly sliced 2 tbsp chopped cilantro ( just mix them together in to a big salad bowl ) Dressing ingredients : 2 tbsp mayonnaise 2 tbsp fresh pomegranate juice 1 tbsp fresh lemon juice 1/2 tbsp of lemon zest 1/2 tbsp honey pinch of garlic powder pinch of red pepper flakes  ( on the small bowl just mixed and whisk all dressing ingredients until combine ) pour salad dressing into chicken salad mix,stir until combine ready to serve as a salad or on sandwiches,,,, E n J o Y,,,and Have a great weekend !!!

Kiwi Citrus Salad dressing

To my friend Cindy,,,thanks for the grape fruits,some of them I have for my breakfast and lunch even on the salad and I still have some more :) Because I like to make homemade salad dressing and I always have other type of citrus,so I mix them with orange and kiwi,,,so citrus,,,Love it :) Ingredients : 2 kiwi  ( peeled and cut ) 1 orange ( 3 tbs fresh orange juice + 1/2 tsp orange zest ) 1/2 grape fruits ( juice ) 1 tablespoon lemon juice + 1/2 tsp lemon zest 1 clove garlic 1 tablespoon honey 1 tablespoon avocado oil 1 tablespoon mayonnaisse 1/2 tablespoon dijon mustard ( blender all ingredients until combine )

Asian chicken salad Ingredients : estimates 1 cooked chicken breast slice/grilled/blackened/ u can use chicken tender Iceberg lettuce Napa cabbage English cucumber 1 small tomato ( optional ) 1 cup won ton chips ( or use mix green salad ) After eat a lot of rich dessert during holiday  these oranges is my dessert   :) Dressing ingredients 1  Tbs lime juice 2  Tbs soy sauce 1  tsp fish sauce 1  Tbs grated ginger 1  Tbs honey 1  Tbs sesame oil 2  Tbs chopped cilantro 2  Tbs chopped peanut ( optional ) ( whisk all ingredients until combine  and pour in to salad mixed) Happy Monday  everyone and have a great week ahead !!!

Artichokes and asparagus pasta salad

Artichoke and asparagus pasta salad Ingredients: I package barilla tricolor rotini 2 cups  grilled artichokes in oil (Del destino) 2 cup cut fresh asparagus dressing ingredients: 2 clove garlic 1 lemon ( zest and juice ) 1/4 cup sun dried tomato 2 tbs olive oil 2 tbs oil from grilled artichoke 1 tsp honey 1 tsp  black pepper Preparation: on the food processor or chopper mix all dressing ingredients together until combine, set aside cut artichokes in to bite pieces set aside trim and cut fresh asparagus and wash, bring water to boil,and cook pasta follow the direction on the package drop cut asparagus let cook together with pasta until pasta is done ( about 2-3 minutes remaining time ) drain pasta and asparagus, on the mixing bowl,mix pasta,asparagus and artichokes, pour with dressing and stir until combine ready to serve,warm or cold. Golden Kiwi cucumber salad

I do like to cook But sometime there is a time that I feel like,,I don't want to cook,just have a simple meal like a salad with store bought dressing, on my preview post I'm talking about to clean the fridge and freezer ( using old stuff before going bad ) one of them is a salad dressing,,,I won't keep more longer,,,so I've been using this "sesame soy ginger vinaigrette,,,,next post I will have dish with pastry,,,yup these getting old too,,, Golden kiwi cucumber salad This is just simple salad,no recipe you can have with anything you like,, I use what I have in the kitchen  :) 4 golden kiwi 1/2 english cucumber 3 red radish little bit red onion ( just slice them,and pour salad dressing on top )

Many stores now offer Gado-Gado dressing in dried blocks to which you simply add hot water, making it easier and cheaper to cook at home. peanut sauce/instant salad dressing gado-gado can be made with any vegetable you like,such a cabbage,green bean,beansprout,cucumber lettuce,etc and topping with fried tempeh or tofu and crackers,such a shrimp cracker or tapioca crackers if you like. just one of  my experiment,never made grilled salad before,all ingredients on this salad  has to be grilled except chick peas,i use basil pesto sauce for a salad dressing,,,,and i will defenitely  will make it again,because i never thought basil pesto on the salad,,,is really perfect for summer salad :) Ingredients : 1 can 15.5 oz chick peas 4 corn on the cob 1 green tomato ( sliced ) 2 round sliced red onion handfull of chopped green onion handfull of thai basil preparations : grill all salad ingredient until had mark on it chopped and on mixing bowl mix grilled salad ingredients and add about 5 tbs basil pesto sauce stir really good salt and pepper to taste and topped with parmesan cheese

Cucumber salad/indonesian acar timun

Cucumber is one of my favorite vegetable,especially for a salad, I like to use seedless cucumber better too,because is better for a salad. This salad is very simple and easy to make,normally in my country they served as a side dishes for a satay such a chicken satay,beef or lamb satay with Indonesians traditional peanut sauce. Ingredients; 1 seedless cucumber 2 carrot 1 big size shallot for the sauce : 1 lemon juice  or ( 1 tbs white vinegar ) 1 tbs sesame oil 1/2 tsp salt 1/2 tsp sugar add sliced chili ( optional ) preparations : cut cucumber and carrot  /you can cut cube or julienne,and sliced shallot really thin and mix it in the salad bowl mix lemon juice/white  vinegar,sesame oil,salt and sugar,whisk it and pour into salad bowl and stir very well.
