Karedok/raw vegetable salad

Article from Wikipedia.                                                                                                                        Karedok is a raw vegetable salad from West JavaIndonesia. It is one of the Sundanese signature dish. It is made from cucumbersbean sproutscabbagelegumesThai basil, and small green eggplant. It is very similar with gado gado, except all the vegetables are raw, and it uses kencur, Thai basil and eggplant for other places karedok also known as Gado-gado (Indonesian and Betawi language) or also called Lotek (Sundanese) for its cooked version - differed from lotek atah or karedok for its fresh and raw version of the vegetable covered with peanut sauce and pecel (Javanese language) is an Indonesian dish comprising a vegetable salad served with a peanut sauce dressing, originally been a Sundanese dish. Karedok is widely served as dailly food in the sundanese family, ussualy added with hot rice, tofu, tempeh and krupuk. nowadays we can found karedok in many variation from hawkers carts, stalls (warung) as well as in restaurants and hotel both in Indonesia and worldwide.


Karedok is part of a wide range of Indonesian dressing & salad combinations, along withlotekpecel and gado-gado. In many places, to retain authenticity in both the production and flavor, the peanut sauce is made in individual batches, in front of the customers. However, since the dish has gained popularity (because of the increase of Asian-themed restaurants) Karedok sauce is now mostly made ahead of time and cooked in bulk, although this is probably more common in Western restaurants rather than in Indonesia. Nowadays in supermarket and stores many peanut seasoning for karedok was made, and sold.
I copied article about this food from wikipedia,just make sure i got the right words,and explanation about this traditional raw vegetable salad,but i made this recipe my self :) with the ingredient what i have on hand :)

Ingredients:estimates

shredded cabbage from half of small cabbage
beansprout
long snake bean ( available in Asian market )
cucumber ( slice )

Preparation :
On a salad bowl mixing all vegetable ingredients

for the sauce ingredients:

1 cup unsalted cooked peanut
handful Thai basil
2 thai chilli pepper
1 tsp brown sugar
1/2 tsp salt
1 clove of garlic
1 tbs tamarind paste/juice
1/2 tsp kencur/ greater galangal
( if you have fresh greater galangal is better )
1 small bolied potato
( on food processor or chopper, chopp all sauce ingredients until blended and smooth )
and pour into vegetable salad and mix it until combine

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. Seafood medley Tom Yum soup

This type of Thai soup is very popular in Thai cuisine around the world,is basically clear soup with prawn/shrimp and mushroom with rich Asian spices in it,such as galangal,lemon grass and kafir lime leaf and is spicy too which I like. But I will make this Tom Yum soup my own,I use seafood medley instead of prawn/shrimp,and thicker soup instead of clear.
