Chocolate mint macarons






Today is the first day of winter but the weather has been warm so far, I heard is going to be warm on christmas day this year in our area,  You all enjoy while you can I'm sure it won't be long the cold weather is on the way.

I found this tiny chocolate chip mint at Dayton's farmers market when I show them I thought about blend them with cream for macarons filling It was delicious creamy and minty.

Ingredients :
- 1/2 cup almond flour
- 1 cup confectioner's sugar
- 2 eggs white
- 3 Tbsp granulate sugar
- 3 drop green coloring

Filling :
- 8 oz cream cheese/room temperature
- 4 Tablespoon powder sugar
- 2 Tbsp heavy cream
- 3/4 cup chocolate mint


Preparations :
- Line two cookies sheet with silicon baking mate
combine powdered sugar,almond flour in a food processor,pulse into fine powder
sift mixture into medium bowl,discard large pieces

- Beat egg whites in large bowl with electric mixer at medium speed until foamy add 3 drop green food coloring, gradually add 3 Tbsp granulated sugar,beating at high speed about 2 minutes or until mixture foam stiff,shiny peaks.

- Mix well to incorporate powder sugar and almond, Incorporate the beaten egg whites into the dry ingredients using large spatula,mix well and fold the mixture
Then work in the mixture (macaronage ) using plastic scraper, press down well with the scraper,going back and forward,to press out the oxygen from the white,Do this for 2-3 minutes until you have smooth mixture.

- Attach 1/2 inch plain tip to piping bag,scoop batter into bag pipe 1-inch circles about 2-inch apart onto prepare cookie sheets,tap cookies sheet on flat surface to remove air bubbles and set aside,let macarons rest uncovered,until tops harden slightly,this takes from 15 minutes to an hour in more humid condition,when the batter does not stick,macarons are ready to bake.

- Preheat oven to 350 F, Place rack in center of oven,bake 14 minutes,rotating cookies sheets halfway trough baking time. cool completely on cookies sheets

- For macarons filling, In a small bowl, mix chocolate mint and heavy cream, melt chocolate mint in microwave about 20-30 second and stir until melted and smooth, set aside

- In a mixer mix cream cheese, powder sugar and melted chocolate mint until smooth transfer into piping bag with match same size cookies,pipe or spread filling on flat side of one cookie and top with another.

    i have a hate love relationship with macarons, try it few time and fail! Hahaha...

Seafood medley Tom Yum soup

This type of Thai soup is very popular in Thai cuisine around the world,is basically clear soup with prawn/shrimp and mushroom with rich Asian spices in it,such as galangal,lemon grass and kafir lime leaf and is spicy too which I like. But I will make this Tom Yum soup my own,I use seafood medley instead of prawn/shrimp,and thicker soup instead of clear. Ingredients : - 2 lbs seafood medley ( shrimp,mussel and squid ) - 1 cup sliced mushroom - 1 cup small young corn ( Asian best ) - 3 cup of water - 1 cup of milk ( optional for thicker soup ) - 1/2 tbsp vegetable oil spices ingredients : - 1  clove shallot ( thinly slice ) - 1 clove garlic ( thinly slice ) - 1 stalk lemon grass ( thinly slice ) - 1 tbsp grated fresh galangal - 1 teaspoon tomato paste - 2 Thai chili/ fresh red Cayenne pepper ( chopped really fine ) - 1 teaspoon tamarind juice/ lemon or lime juice - 1 tsp fish sauce - salt to taste - pinch of sugar - 4 kafir lime leaves - 2 stalk gree

Shrimp Corn fritters

Happy Tuesday everyone, It's been awhile since my last post, I was little bit busy this week,I hope everyone still enjoy the summer weather for the rest of season. Fresh sweet corn is cheaper in the summer time,I like to use them as ingredients of my cooking. I made shrimp corn fritters,simple and easy ! Serve as side dish with  rice or curry dishes :) Ingredients : - 2 fresh sweet corn,cut on the cob - 1/2 lb salad shrimp,chopped/ medium size shrimp - 2 Tbsp flour - 1 egg - 1/4 cup  shredded mozzarella cheese - hand full chopped green onion or basil - 1/2 tsp of salt - 1/2 tsp garlic powder - pinch of black pepper - 1/2 tsp curry powder vegetable oil for fry about 1/4 cup Preparation : In a bowl mix all ingredients until combine,stir the batter evenly Heat vegetable oil in medium high temperature spoon the batter into hot oil,fry about 2-3 minutes each side until golden brown. transfer to the plate lay with paper towel.
