purple yam salad











I use purple yam instead of regular potato for this simple potato salad, It turn out the salad is so colorful, Mixed hard boiled egg yolk and mayonnaise with a little bit honey mustard adding more color to it.
Can be served as side dish,on sandwiches or deviled eggs.



Ingredients :
- 1 lb purple sweet potato
- 1/4 cup dice celery
- 1/4 cup dice white onion
- 4 hard boiled egg yolk
- 1/4 cup Hellman's mayonnaise
- 2 Tablespoon sweet relish
- 1 teaspoon honey mustard

Preparation :
In medium pan brings water to boil, Boil 4 eggs until set about 10 -15 minutes,set aside
peel the purple sweet potato skin, cut in cube and boil until, and put in the fridge until cold
*Tip*  cook purple potato cube with eggs at the same time, to reduce cooking time

Cut hard boiled egg in half, scoop the egg yolk
In a medium bowl mix cold purple potato cube with dice celery,onion
smash egg yolk with fork add into potato mixture add mayonnaise,honey mustard and sweet relish
Mix them well until combine,ready to serve!

  3. Are we referring to keladi? Its one of my fav. You get a wonderful invention with it. Such a lovely dish as finger food for gatherings.
