coconut pandan ice cream

Some of you probably not familiar with pandan leaves, Pandan leaves is very popular in Asia mostly in south east Asian countries,  I found pandan leaves in Asian market here.
As an Indonesian I love the combination of pandan flavor and coconut,  I made coconut pandan ice cream, the creaminess from coconut milk and pandan flavored are well blended in this ice cream.











Ingredients :

- 1 can coconut milk
- 1 pint heavy cream
- 4 pandan leaves
- 3 egg yolk
- 1 cup sugar
- 4 drop pandan paste





Directions :
In medium heat combine pandan leaves and coconut milk 


In a small bowl whisk sugar and egg yolk to make a custard,and pour into coconut milk mixture
stir frequently and cook until about boiling.


Remove from heat add heavy cream and cover up and let them cool completly in the fridge
remove pandan leaves and transfer into freezed ice cream maker according to the manufacture's intruction, serves immediately or transfer into air tight container and save in the freezer

    I am curious on where you got the pandan leaves from? It must have been really expensive to buy it in UK. My garden "melambak" with pandan.

    Can I make the ice-cream without the maker? I don't have the maker and we rarely have ice-cream.

    I just love the pandan and coconut flavors together, the best of Asian tastes.

  5. That's what I call unusual and fantastic ice cream!

    Unfortunately I never even saw pandan leaves even in our local Asian market where they sell their fresh produce; but I did have the pleasure of receiving pandan paste from a blogger friend from Malaysia (sorry to say it leaked all over the package)...the aroma was incredibly beautiful!

  6. I am still so curious to try this flavor of ice cream. I love pandan leaves, but I have only used it to cook savory in SL cooking. The ice cream looks so creamy and delicious and I love your playful photos with the cones. :)

Coconut pandan Muffins

Ingredients : yield 16-18 muffins - 2 stick unsalted butter softened - 1 cup sugar - 4 eggs - 1+1/2 cup self rising flour - 1+ 1/2 cup unsweetened shredded coconut - 1/2 tsp pandan paste  Preparation : Preheat oven on 350 degree F beat butter and sugar until fluffy add egg one at a time add flour,coconut and pandan paste,just beat until all ingredients combine scoop in to muffin's cup,make about 18 -20 muffins ready to bake into the oven about 25 minutes or until insert tootpick come clean Add caption E N J O Y ,,,,
