Good for you coming up with a recipe to use up the eggnog. I hate to waste too. I don't like eggnog either. So that makes me totally see why you didn't like it to drink. It tastes so rich and I can feel the fat. But like you said, it was perfect for these wonderful muffins. Well done. :)
ReplyDeleteI like eggnog but I always have some leftover after the holidays. This sounds like a perfect recipe to use it up.
ReplyDeleteDelicious! I like eggnog, but I don't love it. I think the muffins are just right! Thanks for sharing and BRAVO for coming up with a great way to use it~
ReplyDeleteI'm not a big fan of drinking straight eggnog either. It's always good in baked goods though - obviously these muffins are amazing =)
ReplyDeleteGreat way to use up the eggnog. I know what you mean, it is very rich. I can't usually have more than a few sips.
ReplyDeleteI'd never thought of doing an eggnog muffin - great idea!
