Jackfruit is commonly used in South and Southeast Asian cuisines.[16] It can be eaten unripe (young) when cooked, or ripe uncooked.[16] The seeds may be boiled or baked like beans. The leaves are used as a wrapping for steamed idlis.

The young fruit is called Polos in Sri Lanka. It is a dish with spices to replace meat curries in Sri Lankan cuisine. The skin of unripe (young) jack fruit must be pared first and discarded and then the whole fruit can be chopped into edible portions and cooked to be eaten. The raw young fruit is not edible.[16] Young jackfruit has a mild flavour and distinctive poultry like texture. The cuisines of IndiaNepalBangladesh,Sri LankaIndonesiaCambodia, and Vietnam use cooked young jackfruit.[16] In Indonesia, young jackfruit is cooked with coconut milk as gudeg. In many cultures, jackfruit is boiled and used in curries as a staple food[17]

Ripe jackfruit is naturally sweet with subtle flavouring. It can be used to make a variety of dishes including custards[18] , cakes, halo-halo and more. Ripe jackruit arils are sometimes seeded, fried and sold as jackfruit chips.
Just another experiment,i made cookies from ripe jackfruit,turn out really good,i really like it :) so i posted here to share with you guys,if you are  not familiar with jackfruit,is available in most asian market.

 Ingredients:
1/2 cup unsalted butter ( room temperature plus extra for greasing)
1/2 cup sugar
1 egg yolk
finely grated rind of 1/2 lemon
1 1/2 cups all purpose flour ( plus extra for dusting )
1/2 cup finely chopped ripe jackfruit

Icing :
1/2 cup confectioners sugar
1 1/2 lemon juice
( mix the confectioners sugar with the lemon juice )




 preparation :
preheat the oven to 400 degree F
grease baking sheets
cream together butter and sugar until pale and fluffy,beat in the egg yolk and lemon rind
sift the flour,stir then add chopped sweet jackfruits,mixing with your hands to a soft dough
roll out the dough on lightly floured surface to about 1/4 inch
stamp out  round with a cookie cutter.
stamp out the center of each round with an -inch cutter
place the ring on the prepared baking sheet,re roll any trimming and cut more cookies
bake in the oven for 12-15 minutes
let cool for few minutes then transfer to wire rack to finish cooling
drizzle icing over the cookies and let stand until set

  4. I've always wanted to try out jackfruits but never really new how (I've seen the canned version in asian supermarkets before like you said). This recipe sounds like a good to do so. :)

jackfruit and tofu curry

Most Asian people know about jackfruit, If its unripe the color is green can be use for vegetables and if ripe the color is yellow can be consumed as a fruit or to add flavor to a variety of dessert. This time I use canned green jackfruit/unripe to make a vegan curry with tofu cooked in coconut milk with curry seasoning to serves with steamed white rice. Canned jackfruit can be found in Asian / Oriental market in vegetable isle I made similar dish before  jackfruit sweet stew with chicken/gudeg  this time I made vegan version with tofu, And I also made  jackfruit muffins  use ripe jackfruit for taste. Ingredients : - 2 cans / 2lb  cooked young jack fruit - 1 lb green beans - 1 package block fried tofu / cut in cube - 3 shallots - 2 cloves garlic - 2 fresh cayenne pepper - 1 teaspoon coriander - 2 bay leaves - 2 inch galanggal crushed - 1 stalk lemon grass,crushed - 1 can coconut milk add with 3 cups water - 2 cubes vegetable bouillon  - 1 teas

roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. Ingredients : - 3 medium size sweet potato - 6 large tomato - 1 yellow onion - 4 clove garlic - 11/2 Tbsp dry basil -  2 hot chili or pinch red pepper flakes / optional - 1 teaspoon black pepper - 1 teaspoon salt/taste - 4 Tbsp olive oil - 1 teaspoon honey - 1/2 cup sour cream / 1/2 cup coconut milk Directions: Preheat the oven on 400 F Peel sweet potato and cut in large cube, Cut tomato in wedges slice onion and crush garlic, transfer all cut ingredients,garlic and chili into baking dish, sprinkle with olive oil  and dry seasoning ( dry basil,red
