Water spinach stir fry

Kang kung = water spinach  This vegetable is common ingredient in South East Asian country like Indonesia, Singapore and Malaysia, it is very easy to find and cheaper than any other vegetables. But of course  is not the same here in the US anything cheaper in the country origin it's mean more expensive here. By the way It's my first time to see this Kang kung / water spinach at local Asian market. I can't even remember when I had this water spinach/kangkung last time. Just like regular spinach  this water spinach is very light and is easy to cook,just simply stir fry or cook in boiling water in few minutes,,,, Ingredients : - 1 lb water spinach/ kangkung - 1 tbsp vegetable oil - 1 shallot - 1 clove garlic - 1 tsp grated ginger - 1 fresh cayenne pepper/ Thai chili ( optional ) - salt and pepper to taste or use soy sauce ( if you like ) Preparation : Wash and trim the edge of the water spinach stalk, pick all the leaves off and cut the stalks or ro

Mango and coconut strings in juice.

Since I'm fasting during the days for Ramadan,I like to have refreshing drinks when I brake my fast,so this kind of drinks is very simple to make and also perfect drinks for hot summer days like these days !! you can use any fruits you like,,, Ingredients : - 1 mango ( peel,pitted and cut in cube ) - 1 cup string coconut in syrup - 3 cup mango juice - 1 cup sparkling water ( perrier ) Just mix all ingredients on the jar or bowl and serve with ice cube !!

Shrimp with pickled ginger strip

I create the shrimp dish with mostly leftover ingredients need to use up soon.  I had pickled ginger strip,spring roll sauce and tom yum paste, I just mixed with little bit of these ingredients,and add green pepper and tomato from the garden, It's turn out really good with spicy from fresh cayenne pepper,This dish good to served with jasmine rice. Ingredients : - 2 lbs raw shrimp/skinless and tail on - 1 green pepper - 1 large tomato - 1 yellow onion - 1 tbsp vegetable oil - 1/2 cup pickled ginger strip - 1 shallot - 2 clove garlic - 2 fresh cayenne pepper - 1 tbsp tom yum paste - 2 tbsp maesri spring roll sauce ( is kind sweet sauce ) - 1/2 tbsp soy sauce Preparation : wash the raw shrimp,set aside cut onion,pepper and tomato,set aside cut shallot,garlic and cayenne pepper into thinly slice heat vegetable oil in large fry pan/wok saute shallot,garlic,cayenne pepper and pickled ginger strip add shrimp and spice up with tom-yum paste,spring rol

Agar-agar pudding

Agar-agar is a natural vegetable  gelatin  counterpart. White and semi- translucent , it is sold in packages as washed and dried strips or in powdered form. It can be used to make jellies, puddings , and  custards . For making jelly, it is boiled in water until the solids dissolve. Jasmine rice pudding

Jasmine rice is originally from Thailand,is commonly known as fragrant rice,scented rice or aromatic rice,the official name of the highest grade "Thai Hom Mali " rice. I cook jasmine rice so often to serve with side dish,vegetables,fish or meats dishes. But this time I make a dessert "jasmine rice pudding" Ingredients : - 1 cup uncooked jasmine rice - 3 cup water - 2 cup coconut milk - 1/2 - 3/4 cup condensed milk - 1 tbsp butter - pinch of salt - 1/2 tsp nutmeg - 1 tsp vanilla extract - 2 egg yolk Directions : Bring 3 cup water  to boil in a sauce pan / medium size pan stir rice into boiling water  add 2 cup coconut milk,reduce heat to low,cover and simmer for about 15-20 minutes. add condensed milk,salt,nutmeg add beaten egg and stirring constantly cook for another 2-4 minutes until thick and creamy remove from heat, and stir in butter and vanilla let them cool in the fridge before you serve,,,,or you can serve warm if you like !!

Sun-dried tomatoes and feta biscuits

In the previous post I mentioned about basil,,I had a tons of basil need to use up from my little garden,so I made this   Roasted basil tomato soup  for late dinner in rainy days,serve with this " Sun dried tomato and feta biscuits " Ingredients : 8 biscuits - butter, for greasing - 2 3/4 cups self-rising flour - 1/4 tsp salt - ground black pepper - 6 tbsp butter - 2 oz sun-dried tomatoes in oil,drained and chopped - 1/2 cup crumbled feta cheese - 1 cup milk plus extra for glazing Preparation: Preheat the oven to 425 F / 220 c Sift the flour,salt and pepper into a bowl and rub in the butter evenly with your fingers. Stir in the sun-dried tomatoes and feta then stir in just enough milk to make a soft smooth dough. Roll out on a floured surface to 1 1/4 inch/6 cm squares,place on the baking sheet and brush with milk Bake for 12 - 15 minutes,until golden brown.

Acar Timun / javanese cucumber and carrot pickle

In Indonesia, acar is commonly made from small chunks of cucumber, carrot, shallot and occasionally pineapple, and marinated in a sweet and sour solution of sugar and vinegar. Some households add lemongrass or ginger to spice it up.   In Indonesia,Malaysia and Singapore acar timun is popular as a side dish for satay dishes and fried rice.  It's very simple and easy to make. Ingredients : - 3 baby cucumber or 1 English cucumber - 1 large carrot - 2 shallot - Thai chili ( optional ) - 1 tsp salt - 1 Tbsp sesame oil - 2 Tbsp white vinegar - 1 tsp sugar Preparation : Cut cucumber and carrot into chunks,cut shallot into thinly slice  if use Thai chili, to avoid ( hot spicy ) just use whole chili...set aside in a small bowl mixr white vinegar,salt and sugar,stir until dissolved  pour into cucumber mixed,let them marinated for about 15 minutes or so,,,ready to serve fresh as a side dish,and store leftover on the fridge. Walnut Crusted Salmon

Since I cook salmon so often,I need to prepare in different way. This time I try to coated with ground walnut and spice up with dry spices ingredients and grill them to serve with salad.  Ingredients : - 2  6 oz salmon fillet - pinch of salt and pepper - 1/2 tbsp olive oil - 1/2 cup roasted walnut - 1/2 tsp ginger powder - 1/2 tsp garlic powder - pinch of smoked paprika powder - pinch of red pepper flakes Preparation : season salmon fillet with salt and pepper both side and sprinkle with little bit olive oil,set aside roughly chop roasted walnut mix with,dry spice ingredients,ginger,garlic paprika powder and red pepper flakes. Coat salmon fillet with chopped  roasted walnut mixture,and ready to cook on grill/flat grill for about 4-5 minutes each side or until done *depend on how thick or thin the salmon fillet,so you can cook less or longer serve with side dish,rice,vegetables or in a salad.
