Coconut pandan Muffins

Ingredients : yield 16-18 muffins - 2 stick unsalted butter softened - 1 cup sugar - 4 eggs - 1+1/2 cup self rising flour - 1+ 1/2 cup unsweetened shredded coconut - 1/2 tsp pandan paste  Preparation : Preheat oven on 350 degree F beat butter and sugar until fluffy add egg one at a time add flour,coconut and pandan paste,just beat until all ingredients combine scoop in to muffin's cup,make about 18 -20 muffins ready to bake into the oven about 25 minutes or until insert tootpick come clean Add caption E N J O Y ,,,,

Almond Pancakes with salted caramel cream sauce

This law carb pancakes made out of almond flour mixed with egg,almond milk and vegetable oil, serve with an experiment salted caramel cream sauce, can be serve with any pancake syrup you like or make simple sour cream maple sauce, if you get bored to use plain maple syrup for pancakes. Ingredients : serve for 2=6 pancakes - 1 cup almond flour - 1 egg - 1/2 cup almond milk - 1 Tbsp vegetable oil for the sauce : - 1/4 cup whipped cream - 1 Tbsp caramel sauce - 1 tsp salted caramel powder ( just fold them together until well mixed and ready to serve ) OR Simple sour cream maple sauce ( 2 Tbsp sour cream mix with 2 Tbsp maple syrup ) Preparation: Just combine all ingredients together until well mixed on low heat and  non stick flat grill pan/ non stick skillet, cook like regular pancakes,watch closely until pancakes bubble or lightly golden brown and flip them.

Peppermint bark pancakes/valentine's breakfast idea

I posted this peppermint bark pancake before,but this time I just want to share a simple and easy valentine's breakfast idea for you guys to share with your family or loves one. and I would like to thank you to my friend Cindy for heart candy's and mrs,mitchell for  heart cookie cutters :) I made  this pancake from store bought pancakes mix,The recipe and preparation is  Here except I use powder sugar as topping instead of chopped peppermint bark. and Cut the pancakes with heart shaped cookie cutter,do the same with butter using small one,see picture above between two pancakes  and store bought heart shaped candy on top. and I use raspberry curd instead of pancakes syrup, Enjoy,,,hope you guys have a wonderful valentine's day with your loves one :)

Peppermint Bark pancakes

I have a box of peppermint bark during holiday season from one of our friend,I don't know what to do with it.  Since I was off yesterday. I try to use up this peppermint bark to make pancakes, It turn out really good :) Peppermint Bark Pancakes Ingredients: I use store bought pancake mix just add water and follow direction on the package and about 1/2 cup of chopped peppermint bark + pancakes syrup and whipped cream ( optional ) Chopped peppermint bark add some about 3 tablespoon to pancake batter and mixed sprinkles the rest of chopped peppermint bark in to pancake before you flip them You can serve without pancakes syrup if you like,for reduce sugar,a sweetness from bark is sweet enough to start morning activity :)

Carrot Muffins

Happy new year everyone,,,, Wish you all the best in 2012 and I hope everything will be better this year!! This recipe adapted from  http://joyofbaking.com I like this carrot muffins recipe because coconut is one of ingredients in it,and I'm very satisfied with the result I can taste both carrot and coconut,it was yummy muffins :) Ingredients : 1/2 cup chopped roasted walnut 2 cup grated fresh carrot 1 apple  peel and grated 2 cup all purpose flour 1 1/4 cup granulated sugar 3/4 tsp baking soda 1 1/2 tsp baking powder 1/2 tsp salt 1 1/2 tsp ground cinnamon 1 cup grated coconut 3 large egg 3/4 cup canola oil 1 tsp vanilla extract Preparation : preheat oven 350 F whisk together flour,sugar,baking soda,baking powder,salt,cinnamon and stir in grated coconut and toasted walnut set aside. in the separate bowl beat together egg,oil and vanilla extract,fold wet ingredients along with grated carrot and apple,into the flour mixture stirring until combine and moistened

Eggnog French Toast

After Muffins, Eggnog recipe is continue, I still have eggnog need to us up ! and I have a loaf bread from my neighbour,,,so perfect morning to make french toast with eggnog :) Thank you Hickerson's family for cinnamon rolls and a loaf bread. Ingredients : 6 sliced bread ( loaf bread ) 1 cup Eggnog 1/2 tsp fresh nutmeg 1/2 tsp instant coffee powder sugar Ginger syrup/maple syrup cooking spray Preparation : Heat flat grill on 350 degree F mix eggnog with nutmeg and instant coffee whisk them until combine dip sliced bread into eggnog mix grill until golden brown both side  ( it takes about 3-5 minutes ) sprinkles with powder sugar and maple syrup ( I use ginger syrup )

Eggnog Muffins

I always want to try Eggnog,but after I try to drink just a little bit,,,Wow taste so sweet and rich is not kind my drink,I feel like I need a glass of water after that :) But I  don't like to wasted, so I have to make something out of it,taste sweet and creamy I thought is good for muffins :) Ingredients ; - 3 cup flour - 2 tbs tbs baking powder - 1/2 tsp salt - 1 tsp fresh nutmeg - 1 cup golden raisin - 1/2 cup chopped walnuts - 1/2 cup sugar - 1 egg - 1/2 cup canola oil - 1 3/4 cup eggnog Preparation : heat oven on 375 degree F mixed and shift the first four ingredients ( flour,baking powder,salt and fresh nutmeg ) set aside beat sugar,egg,oil and eggnog until combine add flour mixture  beat until fluffy add raisin and walnut fold them until combine yield about 16 muffins bake about 20-25 minutes or until insert toothpick come clean

Nangka muffins/Jackfruit muffins

Ripe fruit ( wikipedia ) Ripe jack fruit is naturally sweet with subtle flavouring. It can be used to make a variety of dishes including custards [18]  , cakes,  halo-halo  and more. Ripe jackruit arils are sometimes seeded, fried or  freeze-dried  and sold as jackfruit chips. Ingredients: - 1 1/2 cup flour - 1 1/2 tsp baking powder - 1/2 tsp salt - 1 tsp cinnamon - 1/2 teaspoon all spice - 3/4 cup brown sugar - 2 egg - 1/2 cup coconut oil - 2 Tbsp mayonnaise - 2 Tbsp  jackfruit  juice from can  - 1 can/ 8 oz ripe  Jackfruit  /chop - 1 tsp vanilla extract preparation : preheat oven on 350 degree F shifted dry ingredients ( flour,baking powder,cinnamon ,allspice and salt ) set aside chop ripe jackfruit ,set aside beat sugar,egg and coconut oil until fluffy,add dry ingredients/flour mixture add juice from jackfruit can,and chopped jackfruit and vanilla beat  until co

Pandan coconut french toast

The cream mixture for the french toast are dairy free, made out coconut milk,egg and pandan paste, mix well together and I drizzle with store-bought  salted caramel or you can serve with regular pancake syrup as dairy free Pandan french toast Ingredients : 4 sliced bread 1 egg 1/2 cup coconut milk 2 drop pandan paste store bought salted caramel sauce preparation: Preheat flat pan on medium high  whisk egg,coconut milk and pandan paste really well cut a slice bread in half and dip a slice bread to the coconut egg mixture  grilled about 2 minutes each side and ready to served with  pancake syrup for diry free or salted caramel sauce and dusted with powder sugar if you like.
