Salted caramel cookies






WITH GROUNDED PEANUT

With grounded peanut

Ingredients :

- 3 stick unsalted butter ( room temperature )
- 1/2 cup sugar
- 4 egg yolk
- 4 cup flour
- 1 cup ground peanut  or  almond flour
- 8 Tbsp milk
- 1 Tbsp vanilla extract


Topping
1 egg wash + 2 tablespoon milk
( whisk egg yolk and milk )
3 tablespoon sugar

Salted caramel frosting :
1 tablespoon milk
2 tablespoon caramel
3 tablespoon powder sugar
2 tablespoon salted caramel cocoa
( mix them well until combine )

Preparation:

Pre heat oven on 350 degree F
Beat butter and sugar until soft and fluffy
add egg yolk one at  time
add flour and ground peanut or almond flour
add milk and vanilla
beat for a while or just stir with spatula until combine
sprinkles flour on kitchen board,roll the cookie dough about 1/2 inch thick
brush with egg wash and sprinkles with sugar
put on the baking pan on parchment paper
bake about 22-25 minutes,,,
cool it for a while,and cut in to desire shape ( square,rectangle etc )
after cool,,,,
drizzle caramel frosting on top cookies.

  9. Oh my goodness, I could eat up all the cookies all by my lonesome. I am not a baker either. My son once told me "Mom you are a better cook than a baker." I was crushed as I love to bake but it does not come naturally to me. I have to really focus when baking.

Banana pandan bread

I don't like to waste the foods, if you have over ripe banana don't throw away, I have quite few recipe with it like this   banana white chocolate muffins ,  white chocolate banana bread  , banana pandan waffle  and this banana pandan bread, if you like white chocolate or pandan taste, they go well together with over ripe banana. Ingredients; - 1 cup coconut oil - 3/4 cup dark brown sugar - 2 eggs - 1 teaspoon pandan paste - 2 1/4 cups self raising flour - 1 teaspoon ginger powder - pinch of salt - 1 teaspoon cinnamon - 3 over ripe banana Direction : Preheat oven to 350 degrees F/ 175 degrees C Lightly grease a 9x5 inch loaf pan. In a large bowl, combine self raising flour,ginger powder,and cinnamon powder, In a separate bowl,  In a stand mixer cream together coconut oil and brown sugar. Add egg one at a time,and a teaspoon pandan paste add over ripe bananas  into coconut oil mixture,stir and add flour mixture, stir just to moisten,and  Pour bat

Chocolate fudge raspberry cake

I decide to make my own birthday cake to share with my friends, after I search the cakes recipe in cook books and looks around ingredients in the pantry and the fridge, I found this chocolate fudge cake recipe. The recipe adapted from "frame by frame"  cook book with slighly change add raspberry curd on chocolate frosting and decorated with vanilla buttercream frosting  with fresh raspberry to add colours into the cake. Ingredients : - 3/4 cup unsalted butter softened, plus extra for greasing - 3/4 cup super fine sugar - 3 eggs beaten - 3 Tbsp dark corn syrup - 1/2 cup ground almond - 1 1/4 self raising flour - pinch of salt - 6 Tbsp cocoa powder Frosting - 8 oz / 225 gr semisweet  dark chocolate, broken into pieces - 1/2 cup dark brown sugar - 1 cup unsalted butter,diced - 5 Tbsp evaporated milk - 1/2 teaspoon vanilla extract - 1/2 cup raspberry curd Decorate with   vanilla buttercream frosting  and fresh raspberry on top.
