Rice noodles in peanut curry sauce









Stir fried rice noodles mixed with vegetables in peanut curry sauce, full with asian flavored, fresh ginger,sesame oil blended with creamy peanut butter soy sauce and sweet soy sauce, use any vegetables you like and top with fried egg if you like.



Ingredients :estimates
- 8 oz rice noodles
- 2 oz snow peas or 2 cup cut fresh green beans
- 1 cup celery stalk thinly slice
- 1/4 brocolli
- 1/2  onion
- 2 clove garlic

For the sauce :
- 2 Tablespoon sesame oil
- 1 Tablespoon grated ginger
- 2 Tablespoon soy sauce
- 1 Tablespoon sweet soy sauce
- 1 teaspoon curry powder
- 1/4 cup creamy/chunk peanut butter
- 1/2 teaspoon red pepper flakes
- 1/2 tespoon white / black pepper


Preparation;
Cook rice noodles follow the package on the package
meanwhile, slice onion and chop garlic,set aside

In a small bowl mix all the peanut curry  sauce inggredients until combine

On medium heat, in large skillet  fry onion and garlic until fragrant
add vegetables cook about 2-3 minutes
add the sauce mixture and add cooked rice noodles
stir really well and make sure the  peanut curry sauce mixed evenly
serve with fried egg on top,

I have never actually cooked with rice noodles! I need to try them sometime. Your peanut curry sounds fabulous!

Peanut butter and noodles??? My, My!!! never knew that this is possible but sure worth it as I can see the lovely outcome from the pic. Sure love all the veges added inside too.
