Cucumber and tomato salad with mint dressing

English cucumber is one of my favorite,is sweeter and have thinner skin than other varieties of  cucumber and they are nearly seedless.It's remind me a type of cucumber in Asian country. I use them so often to make this  Indonesian acar timun   very simple salad and perfect pair with any fried rice dishes. But in this cucumber and tomatoes salad,I try to mixed things up with other herb that I'm not familiar with,like "mint" I don't use mint much on my cooking. Ingredients : - 1 English cucumber - 2 cups cherry tomatoes - 1/4 red onion dressing : - 1 tbsp basil and sun dried tomato seasoned oil/ olive oil - 2 tbsp lemon juice - 1 tsp honey - 1/2 tsp salt - 1/2 tsp pepper - 1/2 tbsp chopped mint ( whisk all ingredients together until combine) Preparations : cut cucumber into cube/ bite size,cut cherry tomato in half,thinly slice red onion In the mixing bowl pour salad dressing toss and mix them together.

Mango Berry Sangria and Blogerversary

I can't believe my blog is already a year old :) a year ago today I start to write on this blog,as a way to document my recipes. Then after I discovered foodbuzz  via google, I thought It was cool and fun to share foods pictures and recipes or any food related, with other foodies. Since then I found so many different foods and recipes from foodbuzz member,so thank you guys for sharing and cheers !!   Ingredients : - 1 cup fresh/frozen raspberries - 1 cup  fresh/frozen mango chunks - 2 cup sliced fresh strawberries - 1 lime /thinly slice - 1 lemon/thinly slice - 1 bottle rose wine - 1 bottle club soda/1 quart - 2 cup mango juice/ I use Ceres - 1/4 cup Chambord Preparation : Into the pitcher mix all fruits ingredients,berries,mango,slice lemon and lime pour rose wine,club soda,mango juice and chambord,stir and chill for 12-24 hours. mango berry on skewers with spicy tamarind palm sugar dip

I had such a great time hosted  dinner party for foodbuzz 24x24 last weekend,and I'm glad my guests are enjoyed this appetizer,mango berry on skewers with spicy tamarind palm sugar dip ( Indonesian style dip) sweet,sour and spicy or we call it  Rujak  or Rojak ( Malaysian and Singaporean spelling ) Basically is fruits salad,you can use any fruits you like the only different is the dipping /sauce is represent of south east Asian country, the dish is very popular in Malaysia and Singapore As for appetizer that evening I serve this mango berry on brochettes skewers with dip/sauce on the side. Now is time to me to share diping sauce recipe,the only ingredients is hard to find here in the US is Greater galangal  but you can skip,or substitute with grate lime/lemon zest, I brought  greater galangal from my country last time. Summer Berries and Mango Fiesta

First of all Thank you  Foodbuzz  for accepting my proposal for this Dinner party,I'm so thrilled to be feature on foodbuzz 24x24  for this month. I choose the theme "Summer Berries and Mango Fiesta" just to welcome SUMMER my favorite season of the year. Summer is when I have a little vegetables garden in the back yard,and fresh herbs on the back porch.  Since I'm originally from tropical country Indonesia I enjoy hot weather. As I love the fruits I have two reason why I choose berries and mango on this theme. Why Berries? Because strawberries,blueberries,raspberries,blackberries are something that I didn't see much in the traditional market when I lived in my small town in part of west-java Indonesia. Since I didn't have a chance to enjoy these berries in Indonesia I enjoy them now that I live in the US. Why mango? Mango-Chicken Curry Salad

Have a great weekend everyone. This mango-chicken curry salad is perfect serve as a salad or on sandwiches. I do love this combination natural sweet from mango on this salad, and only few spices ingredients needed. I use leftover rotisserie skinless chicken breast for this recipe,or you can use cooked chicken from the cans too. so it's more simple and easy.It takes less than 10 minutes to make this mango-chicken salad.  Ingredients : - 2  cooked skinless chicken breast/from rotisserie/cans - 1 mango/diced/cut in cube - 1 cup diced English cucumber - 1/4 cup diced red onion - 1 cup  mayonnaise / I use Hellman's - 1 1/2 tsp curry powder - 1/2 tsp cardamom seed powder - 1/2 tsp smoked paprika powder preparation ; Cut skinless chicken breast in cube in the mixing bowl mix,chicken cube,diced mango,cucumber and red onion,set aside in the small bowl,mix mayonnaise with curry,cardamom and paprika powder,mix them well and toss into chicken salad mixture until co

Tofu vegetarian-vegan chili

Tofu is one of a 'must" ingredient on my grocery list,I use tofu so often in my cooking,I cook in stir fry with vegetables,curry,soup,salad or even simple fried tofu with sweet and sour sauce. I always wanted to make tofu chili, so I made it this week :) Ingredients : - 1 block firm tofu - 1 can 15 oz cannelini bean - 1 can 15 oz black bean - 2 large carrot - 1 tbsp olive oil - 1  yellow onion - 2 clove garlic - 1 jalapeno pepper - 1 can 15 oz dice tomatoes - 2 bay leaves - 1 tbsp salt - 1 tsp black pepper - 1/2 tbsp cumin powder - 1 tsp cardamom powder - 1/2 tbsp chili powder - 1/2  tsp sugar - 1/2 cup ketchup - 1 cup water or estimates - 2 stalk thinly slice green onion for topping ( optional ) - greated cheddar cheese topping for non vegan ( optional ) Preparation : dice carrot and onion,set aside chop garlic and jalapeno set aside crumble tofu with hand,set aside drain cannelini and black beans heat olive oil on medium high tem

Cucumber Mint Crostini

The spread ingredients on this crostini, are crumbled feta cheese mixed with avocado. As an experiment the spread mixture taste really good together with cucumber and chopped mints. crumbled feta cheese is salty,so I add just little bit honey to reduce the saltiness in the spread mixture and avocado adding creamy taste to it.  Ingredients : - Ciabatta bread or french baguette - Olive oil for drizzle - English cucumber - 1/2 cup crumbled feta cheese - 1 small ripe avocado - 1/2 tsp honey - little bit chopped mints Preparation : preheat oven on 350 degree F slice ciabatta bread or french baguette in 2 inch thick drizzle slice breads with olive oil, Bake In the oven for about 2-3 minutes,let them cool. Meanwhile, cut avocado in half and pitted,and scoop with spoon into small mixing bowl mix them with crumbled feta cheese and just little bit of honey to reduce the saltiness from cheese,and smash with fork or spoon until the mixture are smooth
