Grilled salad

just one of  my experiment,never made grilled salad before,all ingredients on this salad  has to be grilled except chick peas,i use basil pesto sauce for a salad dressing,,,,and i will defenitely  will make it again,because i never thought basil pesto on the salad,,,is really perfect for summer salad :) Ingredients : 1 can 15.5 oz chick peas 4 corn on the cob 1 green tomato ( sliced ) 2 round sliced red onion handfull of chopped green onion handfull of thai basil preparations : grill all salad ingredient until had mark on it chopped and on mixing bowl mix grilled salad ingredients and add about 5 tbs basil pesto sauce stir really good salt and pepper to taste and topped with parmesan cheese

Shrimp taco

Shrimp taco Ingredients  and preparations : 6 crunchy taco shell romaine lettuce/shredded o 1 cup chopped shrimp ( just cook shrimp with 1 tbs olive oil and add  1 tbs taco seasoning mix/old Elpaso) chopped red onion finely shredded cheese/fiesta blend salsa sour cream hot sauce ( optional) just layer ingredients on crunchy taco shell

Pina colada cheesecake

Pina colada cheesecake ingredient: Crust 2 package graham cracker crumbs ( about 15 pcs ) 1/2 cup sugar 6 tbs  unsalted melted butter 1/2 cup grated coconut Filling : 2   8 ounce cream cheese room temperature 1 1/2 cup crushed pineapples without juice 1 cup plan yogurt 3/4 cup sugar  4 large egg 3/4 cream of coconut preparation : for crust pre heat oven to 350 F and lightly butter 9 inch spring form pan with 2 3/4 inch high sides in food processor pulse  Honey grahams cracker until crumbs  add sugar and grated coconut  add melted butter stir until moisted and press crumb mixture firmly onto bottom bake until crust about 12 minute,cool and set aside for filling beat cream cheese,and sugar until smooth add egg 1 at a time add plan yogurt add coconut cream beat until well blended,pour filling over crust Bake cheesecake  until set about 1 hour 20 minutes refrigerate uncovered over night you can add pineapple glazed and dry coco

Basil pesto sauce

Ingredients: 1 cup pine nuts ( roasted ) 3 cup of basil ( sweet and Thai basil ) or u can use only sweet basil 1 cup Parmesan cheese 3 clove garlic  (peel it) 1 cup EVOO ( olive oil ) salt and pepper to taste Directions: in a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper. Basil pesto sauce

Date cupcakes with pandan butter frosting

date cupcakes dry ingredients; 1 1/2 cup flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp cinnamon 1/2 tsp allspice ( sift dry ingredients and set aside ) 6 tbs butter  (room temperature ) 1/2 cup brown sugar 2 egg 1/2 tsp vanilla 1 cup chopped pitted date Preparation: Heat oven on 350 F on mixer bowl ,beat butter and sugar until soft add egg one at a time add mixed flour and chopped pitted date add vanilla yield for 12 cupcakes bake for 20-25 minutes for butter frosting 6 tbs butter room temperature 3 tbs powder sugar 3 drop pandan paste on mixer bowl beat until soft ready to spread on cold cupcakes

Vegetarian spring rolls

Vegetarian spring rolls are my family and friends favorite, crispy and serve with  lighly spicy homemade peanut sauce. Ingredients : - spring roll pastry/ skin 25 sheet spring rolls skin - half of  medium size cabbage and 1 large carrot shredded ( see a picture bellow ) - 8 oz rice noodle or bean thread noodles (soak in the warm water for about 7 minutes or  until soft) - half of onion ( chopped ) - 3 clove of garlic chopped - 2 Tbsp soy sauce - 1 cube vegetable bouillon - salt and pepper to taste - 1 egg for glue - vegetable oil for fry Direction Heat 4 Tbsp vegetable oil on medium high fry chopped onion and garlic until soft add shredded cabbage and carrot cook until fragrant. and add  soft rice noodle ( already shock) add seasoning with soy sauce and  1/2 tsp salt+ pepper Cut rice noodle and cook until soft fill the spring roll skin with rice noodles mixture about 2 Tablespoon spring,roll it diagonal  and gl
