Fried catfish with mango salsa in wonton cups

I've been busy at work lately that why I skip blogging for a while, I do have one recipe to post,before I get away to New York city for few days for spring vacation, so see you all in the next post :) This fried catfish with simple mango salsa is one of appetizer idea for potluck or party,if you guys like fish or seafood with crunchy taste from wonton skin.the recipe it work with any type of fish or seafood, and the wonton can be bake or fry.  Ingredients : - 1 lb catfish fillet - 1 cup flour - 1/2 tsp salt - 1/2 tsp black pepper - 1/2 tsp garlic powder - 1/2 tsp paprika powder -  1/4 cup vegetable oil for fry - 16-20 sheets wonton skin simple mango salsa : - 1 mango/ cut into small cube - 1/2 cup cherry tomato/cut in quarters - 1/2 of lemon /juice - 2 stalk green onion/thinly slice - salt+pepper to taste - 1 jalapeno or sweet pepper / thinly slice for garnish ( mix all ingredients together,set aside ) Preparation : preheat oven on 350 F,spra

Mango carrot cake with orange butter frosting

In previous post I mention about clean up the pantry especially the small amount of dry ingredients  that need to use up soon,before getting bad,such as pasta,noodles,nuts etc. This time I will use walnut as one of dry ingredient , We always have carrot and mango in our kitchen,so I made Mango carrot cake. For the *tip* Instead to make frosting use cream coconut curd for filling and frosting. Ingredients : - 3/4 cup vegetable oil plus extra for greasing - 3/4 cup light brown sugar - 3 eggs, beaten - 2 cup grated carrots - 3/4 cup chopped fresh mango - 3/4 cup walnut pieces -  1 orange zest - 11/4 cups self rising flour - 1 tsp baking soda - 1 tsp ground cinnamon - 1/2 tsp grated nutmeg - 3 slice orange to decorate ( optional ) filling with 1/2 cup  creme coconut curd Frosting : - 1 stick unsalted butter/room temperature - 3/4 cup confectioners' sugar - 1 tsp grated rind orange - 2 Tbsp orange marmalade - 2 Tbsp orange juice

Pasta-Ragus with artichokes cream sauce

Ingredients : - 1 lb egg noodles pasta - 1/2 lb fresh asparagus - 2 clove garlic - 1 cup grilled artichokes in oil - 2 Tbsp oil from  grilled artichokes - salt and pepper to taste - 1 cup light cream Preparation;  Cook egg noodles pasta follow direction on the package,  wash and trim asparagus and cut 2 inch long  chop grill artichokes in oil about 1 cup  while noodles is cook,,,,,,  on the sauce pan heat 2 tablespoon oil from the artichoke jar  grate 2 clove garlic into the sauce pan,add chopped artichokes  add cream and asparagus simmer until asparagus is tender  drain egg noodles pasta and mix it into artichokes cream sauce,,,  ready to serve,,,, GRILLED ARTICHOKES IN OIL available @ COSTCO

Potato and Zucchini Gratin

It's my first time to try to make this Potato and zucchini Gratin,and I definitely will make it again  Ingredients : - 3 large potato - 1 large zucchini - 1 tbsp butter - 1 cup light cream - 1/2 cup fat free milk - 3 clove garlic - 1/4 fresh nutmeg/grated or 1 teaspoon ground nutmeg - salt and pepper to taste - 1 tsp Florentine spice blend - 1/4 cup shredded Parmesan cheese  Preparation : preheat oven on 375 F grease the  glass casserole bakeware with tablespoon of butter slice potato and zucchini with medallion slicer arrange or layer slice potato and zucchini on the greased casserole pan, and season with salt and black pepper,set aside,,,, meanwhile,,, Heat light cream and milk on the sauce pan add garlic chopped or grated,nutmeg,pinch of salt and pepper,until about boiling,remove the sauce pan pour into potato zucchini layer on the casserole bakeware sprinkle with a teaspoon of Florentine spice blend and topping with Parmesan cheese into the

Strawberry tartlet/Giancarlo fine european pastry

Mango-cado salad with strawberry poppy seeds vinaigrette

This Mango-cado = mango and avocado salad as a Welcome spring,,,I'm ready to have a little garden and herbs in my back yard and looking forward to warmer weather. Stuffed Pancake Rolls/Dadar Gulung

What I love about this Cabot Greek style yogurt is Rich and Creamy and layer with the two of my favorite fruits Mango and Raspberry,it was perfect to me,I can have this for my breakfast,lunch or simple easy dessert :) for 2 serving you will need : - 1 cup Cabot Greek style plan yogurt - 1 mango/ peel and cut in cube - 1/2 cup fresh raspberry - 1 tsp ginger syrup ( optional ) Easy preparation : in the parfait glasses,just layer,2 tbsp of yogurt,mango cube,raspberry,another layer of yogurt,mango and few raspberry on top and sprinkle with one teaspoon of ginger syrup if you like more sweetness.
