Goi Cuon- Shrimp Spring rolls/Vietnamese cold spring rolls

Goi Cuon - Shrimp Springrolls  Freshly wrapped in rice paper with vermicelli, lettuce, cucumber, carrot basil and  cilantro,served with peanut sauce This appetizer menu,is one of my favorite from Vietnamese cuisine,it is healthy food and taste really good with peanut sauce. I made this for dinner tonight :) Goi cuon Ingredients : 1 package Rice paper wrapper big size  cooked shrimp/ one on each roll/estimates 4 oz vermicelli/rice noodles bunch of lettuce half of English cucumber 1 carrot buch of fresh Thai basil bunch of cilantro sauce ingredients : 1/2 cup ground unsalted peanut 2 tbs sweet soy sauce 1 tbs sesame oil 1 tbs soy sauce 1 tsp fish sauce 1 tbs hot sauce/sriracha/what u prefer ( optional ) 2 tbs lime juice 1 tbs grated ginger 1/2 tsp garlic powder ( just whisk it together until combine )  Preparation : soak vermicelli/rice noodle on the water about 8 minutes/follow direction on the package and set aside make sure clean all vegetable ingr

Hard boil egg meatloaf and my second Award

This maybe sound funny,boil egg in the meatloaf, but hey this is what I love about cooking in my own kitchen I can create an experiment things, not like to cook at work I have a rule to follow,and stick with their recipe,,,,so when I'm home,,,,I'm free and I can play with my cooking LoL by the way,leftover always give me some idea,about cooking so,,,this time I had four hard boil egg. Need to us up soon, you never know is come up with this " hard boil egg meatloaf" I know someone was laughing at me here :) Hard boil egg meatloaf  Ingredients : 1 1/2 lbs ground beef ( 96-4 extra lean ) 4 hard boil egg 2 egg handful green onion green onion/chopped 1 tbs salt 1 tsp black pepper 1/2 tsp cumin 1/2 tsp galangal powder 1/2 tsp nutmeg 1 tbs soy sauce 1 cup panko crumbs Preparation : if you don't have 4 hard boil egg ready,,,bring 4 egg to boil pre heat oven on 350 degree F   4 hard boil egg,set aside  on the mixing bowl,mix ground beef

Green papaya pineapple cupcakes

green papaya pineapple cupcakes Ingredients: 1 1/2 cup shredded green papaya 1/2 cup chopped fresh pineapple 2 cup flour 2 tbs baking powder 2 tbs baking soda 2 tbs cinnamon 1 tsp clove powder 1/2 tsp salt 1 tsp vanilla 1 1/2 cup sugar + 3 tbs  1 1/4 cup vegetbale oil 4 egg Preparation: shredded green papaya and chopp pineapple really fine,and marinate with 3 tbs sugar for an hour or so,,, pre heat oven on 325 degree F Sift flour, baking powder, baking soda, cinnamon,clove powder and salt. Set aside. In a mixer bowl, whisk together sugar and oil until well blended. Add eggs one at a time,add vanilla, mix well.add green papaya and pineapple mixture Add in flour mixture. Beat until well combined  on the cupcake/muffin molds,line large baking cup and spoon cupcakes batter into mold/cups,fill only about 1/2-3/4,not too full so when the batter rise you don't have to worry about overflow ( just my experience things ) yield : abo

Green papaya salad

I bought green papaya about two week ago,originally i will mix it with other vegetables to make Indonesian soup " lontong sayur" but you know what, I'm forget about it,until all mixed vegetables boiling on the pan ;(   ,,,well that papaya won't go bad for a two week or so,,, so,yesterday i decide to make" Thai green papaya salad " i have that salad before many times,i can taste what spice ingredients in it,,,,i just guessing :) Green papaya salad green papaya cut by two  Ingredients : estimates 1/2 green papaya /4 cup shredded green papaya 1/2 of english cucumber 1/4 red onion 1 cup cherry tomato for the salad dressing : 2 clove of garlic 2 lime 1/2 tsp shrimp paste ( optional ) 2 tsp fish sauce 1 tbs brown sugar 2 Thai chili's handful of cilantro 3 stalk green onion 1/4 cup unsalted ground peanut salt to taste if need it. Gado-gado/vegetable salad with peanut sauce

Many stores now offer Gado-Gado dressing in dried blocks to which you simply add hot water, making it easier and cheaper to cook at home. peanut sauce/instant salad dressing gado-gado can be made with any vegetable you like,such a cabbage,green bean,beansprout,cucumber lettuce,etc and topping with fried tempeh or tofu and crackers,such a shrimp cracker or tapioca crackers if you like. Jackfruit cookies ring ( from wikipedia ) Jackfruit is commonly used in South and Southeast Asian cuisines. [16]  It can be eaten unripe (young) when cooked, or ripe uncooked. [16]  The  seeds  may be boiled or baked like beans. The leaves are used as a wrapping for steamed  idlis . [ edit ] Young fruit The young fruit is called  Polos  in  Sri Lanka . Pandan coconut cupcakes  Ingredients : 2 1/2 cup flour 2 tbs baking powder 1 cup unsalted butter ( room temperature ) 1 cup sugar 2 egg 1 tsp pandan paste 1 tsp vanilla extract 1 cup thick coconut milk For the Icing: 1/4 cup condensed milk 1/4 cup powder sugar 1/4 cup sour cream 1/2 tsp vanilla extract Preparation : heat oven on 350 F shift flour and baking powder,set aside Beat butter and sugar until soft and fluffy add egg one at a time  add pandan paste and vanilla add flour mixture then coconut milk pour in to muffin/ cupcakes/ bake cups large size make about 18 cupcakes for the icing : on the Small bowl,just mixer all icing ingredients about 2-3 minutes until combine (  use crunch accent on top of icing or cupcakes decoration ) or toasted of coconut if you like Bake about 20-25 minutes E N J O Y
