creamy peanut butter cookies

I made two dozen of french macarons for my co-worker, So I have to use the egg yolks for something else for sure, so I create creamy peanut butter cookies. It was perfectly delicious, the power of egg yolk make this cookies crunch but soft in the inside it's melt in my mouth. Of course I can't eat all these cookies so I have to share with with friends. Bay the way  I'm glad I found these boxes from party city store, it's originally mini cupcakes box,but it looks perfect for these macarons. Ingredients : 2 dozen cookies - 1 stick unsalted butter / room temperature - 3/4 cup sugar - 2 egg yolk - 1/2 cup creamy peanut butter - 1 cup all purpose flour - pinch of salt Directions ; In mixer beat butter and sugar until light and fluffy add egg yolk one at a time, add creamy peanut butter add egg flour with pinch of salt,beat until combine Place cookie dough on plastic wrap and put in the fridge for about 30 minutes Prehea

white chocolate raspberry macarons

The filling for these macarons is ready in five minutes, I even use microwave to melt the white chocolate and mix with store-bought raspberry curd and confectioner's sugar, Put in the freezer for 3-5 minutes until firm and ready to fill these delicious french macarons. Ingredients : - 1/2 cup almond flour - 1 cup confectioner's sugar - 2 egg white - 3 Tbsp granulate sugar Filling : - 4 Tbsp  raspberry curd - 2 oz  white chocolate - 2 Tbsp confectioner's sugar Preparations : - Line two cookies sheet with parchment paper combine powdered sugar,almond flour in a food processor,pulse into fine powder sift mixture into medium bowl,discard large pieces - beat egg whites in large bowl with electric mixer at medium speed until foamy add 3-4 drop pink food coloring,gradually add 3 Tbsp granulated sugar,beating at high speed 2-3 minutes or until mixture foam stiff,shiny peaks. - mix well to incorporate powder sugar and almond, Incorporate the beaten egg

Mushrooms fried rice

I have leftover baby bella mushrooms and cooked rice in the fridge,So I try to combine those leftover ingredients to make mushrooms fried rice to serve with slices tomato and fried egg. Just omit the egg to make it vegan fried rice. Ingredients : - 4 cups cooked rice - 1/2 lb baby bella muhrooms - 2 Tbsp vegetable oil - 1 egg - 2 shallots - 2 clove garlic - 1 cayenne pepper / optional - 1 Tbsp soy sauce - 2 Tbsp sweet soy sauce - 1/2 teaspoon black pepper Directions: Chop shallot,garlic and cayenne pepper,set aside heat vegetable oil in fry pan/wok on medium high temperature cook chopped garlic,shallot and pepper until fragrant Add dice baby bella mushrooms,add egg and scramble it,add cooked rice soy and sweet soy sauce,stir  and cook thoroughly,until combine. serve with fried egg and slices tomato if you like.

salted caramel nutella macarons

The macaroons filled with two of my favorite ingredients nutella and  salted caramel  simply just mix them together until combine, the consistency is perfect for to fill these macarons,sweet,rich and delicious, I also made  macarons  filling with combination of store-bought ingredients. Ingredients cookies : - 1 cup powdered sugar - 1/2 cup almond flour - 3 tbsp unsweetened cocoa powder - 2 egg whites at room temperature - 5 tbsp granulated sugar Filling : 1/2 cup nutella 1/2  smuckers salted caramel Preparations : - Line two cookies sheet with parchment paper combine powdered sugar,almond flour and cocoa powder in a food processor,pulse into fine powder sift mixture into medium bowl,discard large pieces - beat egg whites in large bowl with electric mixer at medium speed until foamy,gradually add 5 tbsp granulated sugar,beating at high speed 2-3 minutes or until mixture foam stiff,shiny peaks - add half of flour mixture to egg white

stir fry tofu with patty pan squash

I never have  patty pan squash  before, I bought some in farmers market to try, I like vegetable on stir fry so I try to mix patty pan squash with tofu and green beans, It taste like zucchini but it more firmed after cooked, Otherwise it taste so good together plus ginger and sweet soy sauce makes stir fry flavorful and tasty. Ingredients : - 1 block extra firm tofu - 1 lb  patty pan squash - 4 tbsp vegetable oil - 1/2 lb green beans - 2 clove garlic /chop - 3 shallots /chop - 1 tbsp soy sauce - 1 tbsp sweet soy sauce - 1 teaspoon grated ginger - 1/2 teaspoon paprika powder - 1/2 teaspoon black pepper - pinch of red pepper flakes Direction : cut tofu, patty pan squash and green beans,set aside In large skillet heat vegetable oil, fry tofu until lighly brown,transfer in a plate on paper towel,set aside, use the same oil fry garlic,shallot and grated ginger until fragrant, add patty pan squash,green beans and fried tofu, cook for about four minutes or u

Mango blackberry tart

I bought fresh blackberry from a farmer's market, but the taste is too sour not sweet at all, I don't want to waste it, So I mix blackberry with mango and mango jam and made mango blackberry tart. a sweetness from mango and mango jam is good balance with this sour blackberry, It's good combo. Ingredients : - 1 ripe mango - 1 1/2 cups fresh blackberry - 2 tablespoon sugar - 1/2 cup mango jam Pastry : - 1 3/4 cups all-purpose flour,sifted - pinch of salt - 1/2 cup butter / cold - 1 teaspoon vanilla extract - 5 Tbsp cold water - 1 egg Direction : Preheat oven on 350 F Peel and cut mango in cube, drain blackberry with cold water,set aside For the pastry, place the flour,salt,butter and vanilla extract in a food processor and process until the mixture resembles fine bread crumbs, add just enough water to bind to a soft but not sticky dough. roasted sweet potato and tomato soup

This roasted sweet potato and tomato soup can be prepare as dairy free soup, just skip the sour cream and replace with coconut milk. I like spicy on the soup so I add hot chili and roasted together with the rest ingredients, if you don't like spicy at all you can skip the chili as well or just add pinch of red pepper flakes Serve with fresh store bought french baguette or toast. seared mahi-mahi with apricot teriyaki ginger sauce

I try two way how to cook this mahi-mahi, Can be marinate first with apricot sauce mixture  about ten minutes or so. Or brush the fish both side with the sauce and cook in a skillet right away for 3 minutes each side or until cook through and spoon the remaining sauce on top, I like either way. I served this seared mahi-mahi with  caramelized brussel sprouts  with sweet soy sauce and potato dish, it's perfect meal for dinner that evening. Ingredients : - 2  4 oz mahi-mahi fillet - salt and pepper - 1 Tbsp butter - 2 Tbsp apricot jam - 3 Tbsp teriyaki ginger sauce - 1/2 teaspoon cardamom powder Direction : Mix apricot jam,ginger teriyaki sauce and cardamom powder in a small sauce pan simmer in low heat for few minutes until apricot jam are melted and stir really well, set aside Season the fish with salt and pepper, marinate the fish with apricot  mixture sauce for about 10 minutes, Heat butter in skillet in medium high temperatur cook for 3-4 min
